In Indian subcontinent , during Vedic ages when our ancestors fried some barley flour discs & dunked them in honey, they would have never imagined apupa would transform into so many Appams in Parasurama's Bhoomi ( Land). An appam a day keeps the doctor away Seems to be the mantra here. So for today evening, I decided to have 2 of them. Vazhakkappam & Vattayappam . Vazhakkappam is a ripe banana fritter which is popular àcross the state in different names. Muruga Cafe in Ernakulam unusually paired this with some spicy beef curry & thus this combination became a hit. I am not sure whether they are to be credited for this invention but it is a very unusual sweet Savory pairing for Kerala. The hit of the evening though was this heavenly sweet Vattayappam referring to its circular shape. Usually freshly made appam batter makes for a Vellayappam breakfast & Vattayappam snack in the evening. Appam batter fermented with toddy or yeast is sweetened & steamed with probably a few nuts & raisins added to make this an evening treat. It is so wonderful how this porous spongy texture is achieved without no gluten.
