700 gr of Apple puree without sugar
15 g of gelatin
2 protein
300 g mixture of dried fruit (apricots, raisins, apples, cherries, cranberries)
150 gr walnuts
2 tbsp honey or brown sugar optional
First, prepare the crust. All dried fruits, nuts and 2 tbsp Apple sauce mince.
* Should be sticky and very thick paste.
Put it on the bottom of the form with a diameter of 23-24 cm, covered with parchment. Flatten, wetting hands in warm water, and compacted.
* Bake the cake is not necessary.
For the filling, in a small saucepan, mix gelatin with a Cup of applesauce and let stand for 3-5 minutes. Put the pan on the fire and heat, stirring until the first bubbles and complete dissolution of the gelatin. To combine the gelatin mixture with the remaining Apple sauce and put in the bowl of a mixer (“whisk”). Add the whites and, if desired, honey or brown sugar. Include a mixer and gradually increase its speed to maximum. Whisk the Apple mixture until soft peaks form.
* It will be very bright and will greatly increase in volume.
Shift Apple “cream” on the dough made of dried fruit and nuts, flatten. Put into the refrigerator for at least 1 hour.
