A delicious treat, Southern Apple Fritters have a crispy outside and a tender, apple-filled inside. Ideal for a dessert or sweet Southern breakfast.
Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon salt. 1/2 teaspoon ground cinnamon. 2 large eggs. 1/2 cup buttermilk. 2 cups apples, peeled, cored, and chopped. Oil for frying.
Instructions: In a mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon. In another bowl, beat the eggs and mix in the buttermilk. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped apples. Heat oil in a deep pan or skillet over medium-high heat until it reaches 350F 175C. Drop spoonfuls of the apple batter into the hot oil and fry until golden brown, turning as needed, about 2-3 minutes per side. Remove fritters from oil and drain on paper towels to remove excess oil. Serve warm, dusted with powdered sugar if desired.
