Warm flour tortillas are wrapped around the sweetness of apples and chocolate chips to create these delicious chocolate apple enchiladas. An ideal treat for any situation!
Ingredients: 6 large flour tortillas. 2 cups of thinly sliced apples about 2-3 apples. 1 cup of semi-sweet chocolate chips. 1/2 cup of granulated sugar. 1/4 cup of unsalted butter. 1/4 cup of water. 1 teaspoon of ground cinnamon. 1/2 teaspoon of vanilla extract. Powdered sugar for garnish. Vanilla ice cream optional, for serving.
Instructions: Preheat your oven to 350F 175C. In a medium saucepan, melt the butter over medium heat. Stir in the water, sugar, ground cinnamon, and vanilla extract. Bring to a simmer, then add the sliced apples. Cook for about 5-7 minutes, or until the apples are slightly softened. Remove from heat and set aside. Place a small amount of the apple mixture and a handful of chocolate chips in the center of each flour tortilla. Roll up the tortillas, folding in the sides to enclose the filling, and place them seam side down in a greased baking dish. Sprinkle any remaining chocolate chips and apple mixture over the top of the enchiladas. Bake in the preheated oven for about 20-25 minutes, or until the enchiladas are golden and the chocolate is melted. Remove from the oven and let cool slightly. Dust with powdered sugar for garnish.
