Ingredients: 1 cup almond flour. 1 cup shredded coconut. 1/2 cup raw honey or maple syrup. 1/4 cup coconut oil, melted. 1/2 tsp baking soda. 1/2 tsp vanilla extract. Pinch of sea salt. 1/4 cup chopped macadamia nuts. 1/4 cup chopped dried apricots sulfite-free. 1/4 cup chopped dried figs sulfite-free.
Instructions: Set the oven temperature to 325F 163C and place parchment paper on a baking sheet. Mix the baking soda, shredded coconut, and almond flour in a mixing bowl. Combine melted coconut oil, vanilla extract, raw honey or maple syrup, and a small pinch of sea salt in a different bowl. After adding the wet mixture to the dry ingredients, thoroughly mix everything together. Add the chopped macadamia nuts, dried figs, and dried apricots and fold to combine. Form tiny balls of cookie dough with your hands or a spoon, then transfer them to the baking sheet that has been preheated. Use your fingers to slightly flatten each ball. Bake for 12 to 15 minutes, or until the edges of the biscuits are golden brown, in a preheated oven. Take them out of the oven and let cool for a few minutes on the baking sheet, then move them to a wire rack to cool down completely.
