Baking : Alfajores
Heyo~ So I noticed last time that a lot of people saw my last baking post sO HERE'S MORE FOR YβALL!
What I made this week was this cookie dessert thingy (describing is A+ guys), and they're called Alfajores. They're from Latin America (Argentina mainly... I think... >.>), and oMG thEY ARE DELICIOUS <333 I've had them before but I've never actually made them, and I expected it to be a lot harder, but they weren't !!! The recipe is like 5 simple ingredients and I think the hardest part is trying not to eat them all ahaha ^0^ I actually took the recipe from online this time (link to the original recipe), although I think next time I'm going to change the amount of Baking Powder (instead of 4 teaspoons I'll probably do 3 or 3 1/2).
For you people too lazy to click on the link (like me aHEM), I will provide the recipe down below ^0^ (I'll also be doing unnecessary commentary >.>)
Alfajores Recipe:
2 cups corn starch, sifted
2/3 cup unsalted butter (room temperature)
4 tablespoons sugar
4 teaspoons baking powder
4 egg yolks
1 can of dulce de leche (for the filling)
Powdered sugar to sprinkle on top (if you want)
Like a good human being, preheat the oven to 350Β°F.
Oki you've preheated the oven (unless you didn't? ouo) so now take out the butter so that it'll be room temperature by the time you actually use it.
In a bowl, mix the sugar and the egg yolks at medium speed (If you have an electric mixer, that is; if you're using the old fashioned method of a whisk, then I have no idea what 'medium speed' is) for about 3 minutes (or until it's combined)
Add the butter and mix until it's combined and smooth. Ditch the mixer, since you'll use your bare hand for the next part
uM add all the dry ingredients... until they're combined (it should feel somewhat like play-dough after a while). Scrape the sides with a spatula and form the dough into a bowl.
If it's too sticky add a little more (but not too much) corn starch. If it's too dry, add a few tablespoons of milk.
Roll out the dough with a rolling pin. It shouldn't be too thick, but not too thin either. Most importantly, make sure that the thickness is consistent though.
nOW go cut out the cookieeeess ^0^ Use a normal cookie cutter or a bottle cap OR JUST SOMETHING THAT WILL MAKE THE COOKIES A CONSISTENT SHAPE
Lay the cookies onto a tray lined with parchment paper
Bake for about 8 minutes; if any of the cookies have turned brown, then that means that they're all ready.
Let them cool down for a while. Once completely cooled, put as much dulce de leche as you want on one cookie(about a tablespoon should be good, but I'm not judging you if you do more hehe ^0^) Close the sandwich by putting another cookie on top.
If you want, you can sprinkle powdered sugar on top, but personally, I don't think it needs it.
