THE ABSOLUTELY PERFECT SOUR
60ml KAPPA Pisco
15ml Grand Marnier
30ml Fresh lime juice
20ml Sugar syrup
20ml Egg White
Mix all ingredients in a Boston shaker and do a dry shake. This is when you shake without ice with the purpose of emulsifying the egg white to make thicker, sexier foam. Shake hard, vigorously and fast for about 15 seconds, then open the shaker (you’ll see thick sexy foam) add ice and shake again to chill the drink. Double strain into a chilled glass and garnish with Angostura Bitters and some orange peel oil.
Tech TIPS for Geeks:
Use the dry-shake with any drink that calls for egg white. I find this especially useful for girl bartenders cause we have weaker arms (sorry, but it’s true). If you want to avoid shaking you can use a blender with three or four ice cubes only.
Throw the metal spiral of a Hawthorne strainer in the shaker to help emulsify the egg white, or the little ball from a protein shake bottle.
When using egg white, it’s important to add bitters or spray oil from a citrus peel at the end or add any other aromatic garnish to help lose that funny smell egg whites have. Remember we use them for the foamy texture and though they bring no flavor to the cocktail, they can leave a certain undesirable bouquet…
