CAKE:

Ingredients:

2 cups all purpose flour

2 cups sugar

3/4 cup cocoa powder

2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 cup any milk (cow, soy, almond, oat, you choose!)

1/2 cup oil (vegetable, olive, or canola)

2 eggs (if using egg alternative, add another teaspoon of baking powder)

2 teaspoons vanilla extract

1 cup boiling water

Preheat oven to 350 degrees F (about 177 degrees C). Oil/butter two round cake pans and dust them in an even layer of flour.

Add all dry ingredients (thats from the flour to the baking soda on the list) into a bowl and mix until well combined. If you are using a stand mixer, consider wrapping a towel around the top of the machine so the dust doesn't fly everywhere.

Add the rest of the ingredients (except for the water) into the bowl and stir until well incorporated. The cake batter should look a little doughy, but still relaxes when it's not being mixed.

Add in the boiling water VERY slowly and mix well. Now the batter should be thick and pourable.

Pour the batter into the pans, evenly distributing them, and place them in the oven for about 35 minutes.

Let cool completely before using a frosting spatula or butterknife to gently wedge between the pan and the cake and coax it out, flipping it over onto your palm when ready to fully remove it and place it on a plate or baking rack.

FROSTING:

Ingredients:

1 cup sugar

5 tablespoons flour

1/4 teaspoon salt

1 cup milk

1 cup butter

1 teaspoon vanilla extract

Mix the flour, sugar and salt in a small pot until the flour looks a little less lumpy.

Add the milk, stirring nearly continuously with small breaks. It takes a while, so you may want to consider using a chair if you have trouble standing. Once the mixture starts becoming thicker and more pudding-like, transfer it to a heat proof bowl.

Put a piece of plastic wrap or parchment paper over the top of the bowl, pressing it to meet the surface of the frosting, and put it in the fridge. This helps the frosting not form a film on the top while chilling.

Wait for the frosting to completely chill (about 2 hours) before taking it out and stirring the butter until it starts looking more fluffy and forming some peaks.

Slowly add the frosting mixture a spoonful at a time (if you are using a stand mixer, here's where you would use the whisk tool) and mix until the frosting looks fluffy, off white and well incorporated.

Take about 2 spoonfuls of the frosting into a small bowl and stir in about 6 drops of red food coloring. Once well incorporated, transfer into a sandwich bag and cut off one of the corners so you can pipe it on.

Add one layer to your plate, then add a bit of frosting on top of the one layer and spread it about until it's evenly coated. Carefully place the second layer above, now coating its top and sides in the rest of the white frosting. Then use the red frosting to carefully pipe the word "Girl" on the top.
