Grilled Veggie Cheddar Pita
Ingredients: 1 tomato, 2 stalks of celery,1/2 red onion, 6 baby carrots, 1 bunch of broccoli tops, juice of 2 key limes, 1/2 cup cheddar cheese shredded, 1/2 tsp. Italian seasoning, 1/4 tsp of garlic powder, 1/4 tsp of pink Himalayan salt, a few sprays of Butter flavored Pam
1. Chop Veggies in small bite size pieces
2. Heat copper pan and spray with butter flavored Pam
3 Add carrots and celery, cover and heat 4 mins,stir
4. Add broccoli, cover and cook 3 mins., add onion and tomato, spices and key lime juice, cover cook 2 mins. stir
5. Spread Cheese over veggies, cover and cook 1 min. to melt cheese
6.Over fill a pocket pita with the mixture and enjoy!
Tweaks:* Use any veggies you have on hand, bell peppers or even fruits would be good.
* Use mozzarella instead of cheddar to make it Italian
* Add tortilla strips, corn and salsa to make it southwestern
