Cucumber roll stuffed with raw cheese
Creamy Raw Cheese recipe
1/2 Cup Macadamia Nuts
1/2 Cup Cashew Nuts
1/2 Cup Water (adjust)
1-2 T. Nutritional Yeast
1 T. Lemon Juice
Salt and Pepper
Herbs and Spices of your choice (optional)
Place the cashews, nutritional yeast, 1/3 of the water, lemon juice, sea salt and pepper in the food processor and pulse until blended.
Gradually add more water if neccessary.
Add herbs at the end and season as you want.
. For creamy cheese, add more water. Add less for thicker cheese.
Raw Thai Salad 2 Servings
Ingredients
1 zucchini, cut into thin slices or spiralized
2 carrots, cut into thin slices or spiraled
1/2 cup sliced red pepper
1/2 cucumer, cut into thin slices
1 green onion, chopped
1/4 cup Almonds (any chopped nuts)
Cilantro (optional)
Dressing
Juice of 1 lime or lemon (adjust to your taste)
1 clove garlic, finely minced
1 t ginger, finely minced
2 Tbsp. nut butter of your choice
1 Tbsp. +1 tsp. gluten-free tamari (or soy sauce if gluten isn't a concern)
1 tsp. agave or sweetener of your choice (optional)
If you have pineapple juice - add some pineapple juice as well

1/4 cup flaxseed (grounded)

Almond dip with red pepper (raw)
2 cups of (raw) unsalted almonds, soaked overnight
½ red pepper
1/3 cups scallion
2 cloves of garlic
1/2 tsp sea salt (adjust)
1-2 T. water (if necessary)
You can enjoy this dip on toast with some sliced avocado, mixed in a salad for lunch, or scoop some up with raw veggies.
