You can make your F/O transition to a different gender than canon for any reason you want, for any character you want.

"But it would go against canon!" Does somebody being trans contradict real life's canon? Would it be going against canon to use what we know about a character to explore how they'd handle their gender and what kind of transition they'd under go? That's not taking away from anything. That is adding onto canon.

"But what if it contradicts my sexuality?" Listen to me again. I didn't specify that it needed to be a romantic F/O. Make your fictional friend or family member a different gender. It doesn't even have to be a character you like. Diversity win! That character you find annoying is trans!

"But what if the character is canonically trans?" Then yeah keep them as they are in canon.

But otherwise: Make your F/Os become a different gender than they identify as in canon. You can do it if you want to.
