I don’t know if I should keep Tiffany Valentine a woman in this version, and have fem Chucky be a lesbian, or have her a straight woman.

Following canon, she will get a male body at one point, and she will present as male in the body. However, she doesn’t actually care about what gender she is perceived as, like in canon. At this point, Chucky’s gender is just “Chucky”, pronouns (Chucky/Chucky/all)

Side note- good gal dolls follow typical gender norms, because I don’t think a big toy company in the 80’s would be making masculine girl dolls, especially since the design is most likely from a man
