I am particularly jazzed about this week’s treat, nougat. I thought I had my candy thermometer in the baking drawer, so confident in that I uncharacteristically dove into measuring and boiling without first gathering all the requirements. Only after starting the heat and mixing did I realize I didn’t have my thermometer. I am jazzed because I had to lean entirely back on the knack of experience to know when the honey hit soft roll stage and when the sugar hit toffee stage, and I nailed it!
