My wife and I took my parents on a day trip to Truro, Nova Scotia 🇨🇦, one hour outside of Halifax. With the temperature hovering around 28°C, we took advantage of the weather by visiting the beautiful Victoria Park. And of course, before heading home, there was the obligatory stop for ice cream. A nice cool treat to end the warm walk in the park. Our daughter introduced us to a dish last fall, one of which I was not aware existed. But, man, I am glad that I am a aware of it now. This is the second time I have made it—and it is so good; so flavourful. Maple Curry Chicken Penne. And being Canadian🇨🇦, you know we have a fondness for the maple syrup, eh! 😏 It’s a dish that is easy and quick to make (30-minutes). I just cannot get over how good it tastes. The complexity and depth of flavour that the maple syrup, paired with the yellow curry paste, creates is just so damn good. Great tasting food does not necessarily require a plethora of ingredients. Sometimes the K.I.S.S. Principle is more than apropos. Case in point, my all-time favourite hamburger. It’s simplicity personified. You start off with ground sirloin beef seasoned with kosher salt and freshly ground black pepper. Top the cooked patty with fried cremini mushrooms and a healthy dollop of blue cheese—melted, of course. Finally, encase this deliciousness between a lightly toasted brioche bun and you have created, in my mind, what can only be called, “pure magic”.
