They used abrasives, like sand or (less likely, depending on time/place), emery. Turns out the quartz in sand is harder than granite. So the copper tools basically dragged the sand particles over the surface of the granite, wearing it down in a process similar to how a modern emery board wears down fingernails.

I firmly believe that in evolution towards sociality, humans ended up crossing the wires for "personal health" and "community safety". Any degree of my people need me immediately overwrites all sense of ouch.
Even when the degree of need is as small as "I don't wanna scare anyone", and especially when the degree of need is as great as "we don't have the resources for medical care". It's absolutely something that saved groups in our past and present--enabling superhuman acts like injured mothers lifting cars off of children, or sick shepherds continuing to work in the cold and wet, hell, an injured hunter continuing to help their group take down prey--but it's also absolutely a fatal flaw. And you can imagine this pairs SUPER WELL with the dumpster fire of the American healthcare system.
Speaking from personal experience, growing up chronically ill in a financially unstable family in the US leaves a special kind of worm in your brain. Providing healthcare requires resources: even with state-funding childhood healthcare, there's money for gas to get to doctors/hospitals, there's the psychological impact of a sick kid, there's the stress of managing medications, the stress of managing the kid's mental health, the stress of handling well/unwell siblings and their mental health, just, Jesus. The family has to live through all of this. And the kid sees the drain.
All of this to say: the first time I coughed up blood, I tried to make it into a joke to lighten the fear on my parents' faces, and then apologized for scaring them, and for "making them" drive me to the ER at like 1am.
