💫296 calorie creamy zoodles💫
Ingredients:
460g zucchini - 73cal
185g bell pepper - 68cal
100g shrimp - 87cal
100g lowfat curd
cheese/yoghurt - 68cal
For seasoning i used salt, pepper, basil, paprika, parsley
1. Cut the zucchini in thim stripes and let them boil
2. While they boil cut up the bell peppers and the shrimp.
3. Blend the bell peppers with the curd cheese and add your seasonings of choice.
4. When the zucchini is soft, drain the water and add the sauce and the shrimp and heat it up. Make sure you don't cook it too long, so the shrimp doesn't lose its taste
Almost couldn't finish it, it was extremely filling even half of this would make a proper meal
It's only 72 calories and if you add the alcohol its of choice for me its rum 10 ml so about 22 calories you can also make the limit lower if you use low fat milk like about 8 to 18 calories ❗❗

5/14/21 ♡ mini blueberry yogurt cakes [55]
cake total [268] / 6 servings [45]
120g (1/2 cup) nonfat greek yogurt [60]
37g (1/4 cup and 1 tbsp) flour [137]
1fl oz (2 tbsp) unsweetened vanilla almond milk [4]
14g (1 tbsp) reduced fat cream cheese [30]
30g (2 tbsp) egg white [17]
40g (1/4 cup) frozen blueberries [20]
(optional / to taste) hazelnut skinny syrup or liquid sweetener [0]
topping total [60] / 6 servings [10]
14g (1 tbsp) reduced fat cream cheese [60]
(to taste) swerve confectioners sugar [0]
simple directions:
1. mix wet ingredients adding cream cheese last. add flour, enough sweetener to your liking, then fold in blueberries.
2. pour into cupcake liners or mini cake molds, and bake at 350° for about 25 - 30 minutes. let cool.
3. to make topping: use hand mixer or whisk vigorously to "whip" up cream cheese and powdered sugar so it's no longer firm.
4. top cakes evenly and sprinkle with additional sugar if you'd like!
i found this recipe on instagram from mylightkitchen, and i just tweaked it a bit to fit my tastes. the cakes are dense kind of like mooncake, which i really like about them, but i thought it was a little light on flavor so i made the cream cheese topping. i also used bundt cupcake molds and it looked really good! if you make these i hope you enjoy them (:
Recipe #2
Zucchini lasagna boats (zasagna? 😂) (Per 1 boat = 50kcal)
I made these for the whole family and they never suspected a thing about how low cal they were 😂 I guess that just shows how rich in taste and flavour they are!!
Cut your relatively uniform zucchini in half (we will be using only ONE of the haves), and then using a spoon hollow it out, leaving around ¼ inch round the sides. Remember that 100g zucchini = 17kcal (recipie kcal count based on 1 zucchini half weighing 100g, adjust the kcal according to how much your half weighs).
Prepare tomato sauce- add 80g tomato puree (30.4kcal) to mixing bowl and add 50ml water because the sauce will evaporate a lot in the oven. Then add salt and pepper and also garlic, onion and ginger granules (or fresh if you have some) to taste. The garlic, onion and ginger will boost your metabolism, you can also add some chilli flakes for one extra kick.
Pour sauce into boats and add some oregano and basil for that authentic Italian taste.
Cover with foil and bake in 400F/195°C oven for 40mins
Uncover and cook for another 5mins (at this point if you want, you can sprinkle some cheese on top before you put it back in for the 5 mins, but just be aware that it will add between 25-50kcal more to your meal).
Leave to cool and enjoy!
If you want to, you could also cook some mince and put it into the sauce before you put the zucchini in the oven the first time, but remember that it’ll add extra kcal.
TOTAL: 47.4kcal per boat

My 26 calorie vegan lunch!
⋆ shirataki noodles (10 calories, 200g)
⋆ spring onion (6 calories, 20g)
⋆ soy sauce (10 calories, 1tbsp)
I rinsed the noodles really well. Put into a non stick frying pan with the soy sauce, added the onions, and stir fried for maybe 10 minutes, so the noodles dry out a little. That’s all! I live in Japan so these types of noodles are easy to find but I am pretty sure they are available as “weight loss noodles” or “zero calorie noodles” overseas. Check the refrigerator section.

200cal HUGE chocolate chip cookie/cake
i like..... literally cannot emphasize how Big this thing was the pictures make it look so much smaller
this is basically a baked oats recipe (modified from savory nothing’s “tiktok baked oats”) but w a little ~a*n*a~ twist and was made in a rly big ramekin so it was more like a cookie than a cake
(ingredients above in image, dm me if u need them in text form!)
steps:
1. preheat oven to 350F, then blend 75g of oats to make oat flour, or if you already have oat flour then skip this step :3
2. mash 55g of banana in a bowl, then add an egg white, 1/4tsp baking powder (i use a low sodium ver), and sugar-free/calorie free pancake syrup + cinnamon to taste (i used about a tbsp of syrup and 1/2 tsp of cinnamon)
i’d also recommend some sweetener and/or a pinch of salt, but that’s up to you ^_^
3. blend the rest of that mixture w the oat flour, then pour into a large ramekin (for more of a cookie) or reg sized (for more of a cake) sprayed w pam or some other cooking spray (doesnt need too much)
4. add 10g lily’s dark chocolate chips, then bake for about 15 minutes. while baking, mix 6g chocolate pb2 with water, enough to make a drizzle-able topping ;v;
5. take out of the oven, drizzle pb2, then put back in for another 2-5 minutes
6. enjoy @w@
u can def swap out ingredients as u see fit or make the ratios smaller/bigger depending on what fits ur day, i think blueberries or cocoa powder/protein powder mixed into the batter would also be amazing! stay safe + enjoy when u can 🥺♥️
60cal-per-1/8 roll cake!
this thing was HUGE and so yummy it actually tasted like a real dessert and even my v much non-ed housemates agreed and went back for seconds ;w;
the nutrition facts are for the whole thing on the left and for 1/8 on the right which is a decent sized slice imo ^_^
(and without the whipped cream the whole thing becomes just 360 for the whole thing and 45cal per 1/8! you could probably bake it in a regular circular cake pan for that)
you can also add strawberries, pb2, sugar free maple syrup, pumpkin puree... pls feel free to play around w it!
ingredients:
3 egg whites (51cal)
1/4 cup (48g) swerve granular sugar (48cal)
1/2 cup (63g) all purpose flour (229cal)
1/3 cup (76ml) unsweet almond milk (10cal)
4.5 tbsp (42g) nonfat greek yogurt, preferably flavored (i used light+fit strawberry cheesecake flavor) (22cal)
1.5 cup (60g) coconut whipped cream (120)
instructions:
1. preheat oven to 325F
2. in a mixing bowl, whisk eggs w/ an electric mixer while adding sugar, a third at a time, until a meringue is formed
3. in a separate bowl, combine flour, milk, yogurt, and 1/4 of meringue. then, gently fold in the rest of the meringue
4. line baking tray with parchment paper and spread batter into a rectangle with a spatula, bake for 25ish minutes (whenever it starts to brown a teeny bit at some parts on the top and it’s not suuuper foamy when u poke it w a fork, u kinda gotta keep checking it)
5. spread coconut whip onto hot cake and roll
6. let cool/set then cut into eight even slices (or however many works for u ^^) and enjoy!
*modified from tastemade’s moo moo roll cake recipe*
note: u can also add designs to it to make the roll pretty but this was my test run so i didnt try it, if u want to then instead:
-preheat oven to 390F
-place 1/4 of the batter in a seperate bowl and add dye
-pipe design onto tray and cook for two(ish) minutes
-reduce heat to 325F and pour the rest of the batter on and cook until done ^_^
