to celebrate 20k streams on my brand new song "so nice"

whisk wet ingredients in a large bowl

1/2 cup extra virgin olive oil

1/3 cup date syrup (you can substitute for honey or your sweetener of choice)

3 large eggs

1 tsp vanilla extract

1/2 cup strong brewed coffee or espresso (cooled)

1/3 cup plain greek yogurt

once mixed, add your dry ingredients

1/2 cup almond flour

1/2 cup gluten free flour (could be subbed for regular all purpose flour)

1/2 cup unsweetened cocoa powder

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp sea salt

the batter will be thick and glossy, bake for 25 mins at 350° but start checking after 15 mins

the recipe bakes just enough cake for a 6" cake pan, but double it for an 8" or 9" pan! make sure you adjust the cooking time accordingly!

it tastes even better if you listen to "so nice" when you bake it ;)
