A tasty mix of spicy chicken with a honey glaze, crunchy vegetables, and nutty quinoa. This recipe for fried quinoa is a great mix of tastes and textures that makes for a healthy and filling meal.
Ingredients: 2 cups cooked quinoa. 1 lb boneless, skinless chicken breasts, diced. 2 tablespoons soy sauce. 1 tablespoon honey. 1 teaspoon sriracha sauce. 1 tablespoon vegetable oil. 1 bell pepper, diced. 1 cup broccoli florets. 3 cloves garlic, minced. 1 teaspoon ginger, grated. Salt and pepper to taste. Green onions for garnish. Sesame seeds for garnish.
Instructions: Put soy sauce, honey, and sriracha in a bowl and mix them together. Put in the chicken pieces, mix them in, and let them sit for 15 minutes. Warm up the vegetable oil in a big pan or wok over medium-high heat. Cook the chicken until it is browned and fully cooked. Take the chicken out of the pan and set it aside. If you need to, add more oil to the same pan. Add garlic and ginger and cook until they smell good. Put in the broccoli and bell pepper. Cook until the vegetables are soft but still crisp. Add the cooked chicken and quinoa to the bowl. Add pepper and salt. Add three to five more minutes of cooking to let the flavors blend.
