In my CoS campaign, each of Strahd’s consorts drank a single drop of his blood during their wedding. Not enough to make them full vampires but just enough to grant them some free will and a bit of his power (they became something more than the average vampire spawn)

Volenta (rogue): gained Shapechanger — perfect for stalking the players.

Ludmilla (wizard): gained Children of the Night — she's the first consort (and I tied her to the werewolves subplot), so it made sense to me she had a deeper connection with the Land.

Escher (bard): got Charm — the party felt like they absolutely loved him!

Anastrasya (bard): can alter her appearance* — ideal for handling Strahd’s political games in Vallaki.

This was a great way to foreshadow what the party would have faced with Strahd himself!
