New recipe for you all☺️ Banana, peach and chocolate muffins💘 Topped with extra melted chocolate and macadamia crumble! Vegan and gluten free💫 Makes 13-15 muffins Ingredients: 2 overripe bananas - mashed 3 tbsp melted vegan butter - I used nuttelex 1/2 cup raw sugar 3/4 cup soy milk - or other plant based milk 2 cups gluten free self raising flour - or regular self raising flour 1 fresh peach - chopped and diced 50 grams dark chocolate - chopped. I used Lindt 70% +++ extra dark chocolate for melting if you’d like some on the top! And also some macadamias to crush up for the crumble. Method: 1. Preheat oven to 180C and grease muffin tin. 2. In a large bowl, mix together the mashed banana, vegan butter and raw sugar. 3. Next, mix in the soy milk followed by gradually stirring in the flour. 4. Add the peach and chocolate into the mixture. 5. Evenly spoon mixture into the prepared muffin tin (you might need two) and pop into the oven for 25-30 minutes until golden! 6. Wait for the little muffins to cool before removing from the tin. 7. Drizzle with extra melted chocolate if desired! And some crushed up macadamias because YUM! Enjoy lovely people💋 Ps. Teff Banana Bread☺️
Teff flour is my favourite gluten free flour to use! It’s an ancient grain, high in protein, calcium and iron. As a coeliac, it’s hard to find a gluten free flour that’s great for baking. ALAS, teff is a dream come true. I find that it’s very ‘smooth’, slightly sweet and has a subtle nutty taste - not overpowering like buckwheat. If you’ve been following me for a while, you’d know that I love making my maple tahini cookies, which are teff based. As well as pancakes! So good. I’ve never tried using it in banana bread, so thought I would today and it came out amazing! Fluffy, tasty and nutritious. Get in my belly💁🏻♀️ Check out @thesourcebulkfoods if you want to buy some teff flour, I’ve been getting mine from @thesourcebrunswick. Ingredients: 2 large (or 3 small) overripe bananas - mashed 3 tbsp nuttelex (vegan butter) or coconut oil - melted ½ cup raw sugar 2 tsp baking powder 1 cup ivory teff flour 1 cup gluten free self raising flour* 2 tsp cinnamon *If you don’t require GF, feel free to use regular self raising flour
Method: 1. Preheat the oven to 180C and grease a small baking tin. 2. In a large bowl, combine the mashed bananas with the melted vegan butter and raw sugar. 3. Next, stir in the teff flour, followed by the gluten free self raising flour. 4. Stir in the baking powder and cinnamon. 5. Pop the mixture into the prepared baking tin and put into the oven to bake for approx 50-55 minutes. The loaf should be golden and a skewer should come out clean! 6. Allow the loaf to cool before slicing. Add extra cinnamon on top if desired. Enjoy❤️
Savoury vegan pancakes!
Super simple to make and totally delish❤️ Ingredients: 1 cup gluten free self raising flour ~ or regular self raising flour if you don't require GF😺 1 cup almond milk or any other plant based milk 1 tsp ground turmeric 1/4 cup nutritional yeast flakes ~ I get mine from @thesourcebulkfoods 🌱 1/2 shredded vegan cheese - I used @mylifebio mozzarella A couple of handfuls of your fave veggies chopped up - I chose mushrooms, cherry tomatoes and spinach! Herbs of choice Sesame seeds ~ optional Salt & pepper to taste! Makes three big pancakes🍴 Method: 1. Whisk all the ingredients together, minus the veggies and cheese. 2. Pop a pan on the stove top on medium heat and coat with coconut oil spray. 2. Place 1/3 of the veggies into the pan and top with 1/3 of the batter, plus some cheese. 4. Cook from 2-3 minutes, then flip over to cook the opposite side. 5. Repeat this process until all the ingredients are gone. Top with some avocado then enjoy!!! Macadamia choc chip cookies!
A new recipe I created today. They are super delicious! So glad I picked up some macadamia nuts over the weekend. I'll definitely be using them in recipes more often. Hope you guys love these as much as I do❤️
Makes 7-8 cookies😋 Ingredients: 1 cup gluten free plain flour* 1/2 tsp baking powder 1/3 cup maple syrup 1/3 cup softened vegan butter* 1/2 cup dark chocolate chips 1/2 cup crushed macadamia nuts
*You can substitute this for the following flours: Teff, rice, sorghum, buckwheat. If gluten free isn't required, feel free to also substitute with regular plain flour, spelt, oat or wholemeal. *I used nuttelex, but you could also try it with coconut oil.
Method: 1. Preheat the oven to 170C and line a baking tray with baking paper. 2. In a bowl, mix together the flour and baking powder. 3. Add in the maple syrup and vegan butter. Combine until you have a cookie dough batter! 4. Lastly, stir in the chocolate chips and crushed macadamia nuts. 5. Form into cookies, place them onto the tray and then pop the tray into the oven. Bake the cookies for approx 20 minutes! Until slightly golden on top. 6. Remove the cookies from the oven and top with extra crushed nuts and cinnamon sugar if desired! Enjoy☺️

Ingredients: 1/3 cup melted nuttelex (vegan butter) 1/2 cup raw sugar or coconut sugar 3/4 cup almond milk or any other plant based milk 3 tbsp smooth peanut butter 1 & 1/2 cups gluten free self raising flour 1/2 cup vegan chocolate chips Cinnamon, as desired
Method: 1. Preheat the oven to 170C and grease a muffin tray. 2. In a bowl, whisk together the melted nuttelex and sugar. 3. Add in the almond milk and peanut butter. 4. Next, stir in the flour. 5. Lastly, combine the chocolate chips and cinnamon into the mixture. 6. Evenly distribute the batter amongst the prepared muffin tray, makes approx 9-10 muffins. 7. Pop the tray into the oven, and bake for 30 minutes. 8. Remove muffins from the oven and allow to cool! Sprinkle with cinnamon sugar if you like🌸... Lots of love, Ev xx
Banana Bread Donuts!
Banana bread donuts with chocolate icing🤗 Vegan, gluten free and so delicious! Very easy to make also❤️ Ingredients: 1 very ripe banana, mashed 1/2 cup melted nutelex (vegan butter) or coconut oil 1/2 cup raw sugar or coconut sugar 1 & 1/2 cups gluten free self raising flour or regular self raising flour 3/4 cup soy milk or plant based milk of choice Method: 1. Preheat the oven to 170C and grease a donut tray! I got mine from Big W Australia. 2. In a bowl, mix together the banana, nutelex and sugar. 3. Next, stir in the soy milk followed by the flour. 4. Evenly distribute the mixture into the prepared donut tray - Makes approx ten. 5. Pop the tray into the oven and make for 25-30 minutes. 6. Remove from the oven and allow the donuts to cool! Ice or coat in melted chocolate if desired. I made an icing from mixing together icing sugar, cacao powder and a splash of water!

Vegan & Gluten Free Chocolate Mudcake!
So glad I got to create this new cake recipe today. I wasn't sure if it would be successful but it definitely was! Thank goodness, hehehe. Something different, I used canned coconut milk instead of the usual soy or almond, which really helped achieve a rich and moist texture. Hope you all enjoy this recipe! Lots of love, Ev xxx
Ingredients: Wet: 1 + 1/2 cups coconut milk 1 tsp vanilla essence 1/2 cup melted nutellex or coconut oil 1 tsp vanilla essence Dry: 3/4 cup raw sugar or coconut sugar 1/2 cup raw cacao powder or cocoa powder 2 cups gluten free self raising flour or regular self raising flour *If using flour without a raising agent eg. Teff, spelt, plain, rice, oat etc then add 2tsp baking powder.
Method: 1. Preheat the oven to 170C and grease a round cake tin. 2. In a bowl, whisk together the melted nutellex, sugar and vanilla essence. 3. Pour in the coconut milk and continue to whisk. 4. Next, add the cacao powder. 5. Lastly, stir in the flour. 6. Transfer the cake batter into the prepared tin and pop into the oven. Bake for approx one hour, until a skewer comes out clean. 7. Wait for the cake to cool before removing from the tin, drizzle with melted chocolate if desired! I used 'Sweet William' chocolate chips.

Peanut Butter & Jam Banana Bread! I love banana bread so much and I also adore the amazing combo of pb & j, so thought...Why not add them together!?😛 This recipe is vegan and gluten free! Feel free to use regular self raising flour if GF is not required or subbing soy milk for another dairy free alternative. Sending all my love, hope you enjoy❤️
Ingredients: 2 very ripe bananas, mashed 1 cup soy milk mixed with 1 tsp white vinegar 1/2 cup raw sugar 1 tbsp nutellex (vegan butter) or coconut oil 2 cups gluten free self raising flour 1 tbsp + 1 tsp strawberry jam 1 tbsp + 1 tsp peanut butter Dark chocolate if desired
Method: 1. Preheat oven to 180C and grease a loaf tin. 2. In a large bowl, whisk together the mashed bananas, soy milk, nutellex and sugar. 3. Next, gradually add in and stir the flour. 4. Fold 1 tbsp of jam and 1 tbsp of peanut butter into the mixture. 5. Spoon the cake into the prepared loaf tin. 6. Using a small spoon or knife, swirl the remaining 1 tsp of jam and 1 tsp of peanut butter on top of the loaf. 7. Place into the oven and bake for approx one hour! 8. Remove from the oven and allow the loaf to cool. 9. Drizzle with some melted dark chocolate if you like! 10. Enjoy🍞🍓🍌🥜
Mixed Berry & Banana Muffins🍌
Mixed berry & banana muffins! Vegan and gluten free if you like. Plus a loaf I also made, just by doubling the recipe🍌❤️ So easy to make, really moist and quite healthy. WIN WIN! Hope you all enjoy. Have a lovely day💖🌱
Ingredients: 1 very ripe banana, mashed. 1 cup mixed frozen berries (don’t take out of the freezer until mixing them in at the end, to avoid bleeding). 1 cup coconut sugar 1 cup cruelty free milk of choice (I used soy). 1 tsp cinnamon 1 tsp coconut oil or vegan butter, melted ½ cup sorghum flour ~ Can sub with regular plain flour ½ cup gluten free self raising flour ~ Can sub with regular self raising flour ¼ cup coconut flour ~ Do not sub! 1 tbsp baking powder
Method: Makes approx 9 muffins! 1. Preheat oven to 160 degrees c and grease a muffin tin. 2. In a bowl, whisk together the mashed banana, milk, cinnamon, coconut sugar and coconut oil. 3. Mix in the sorghum flour, followed by the self raising flour. 4. Sift the coconut flour into the mixture and combine well. 5. Lastly, mix in the baking powder. 6. Fold in the berries. 7. Spoon the mixture into the prepared muffin tin and bake in the oven for 35-40 minutes until golden on top. 8. Test the muffins with a skewer, if the skewer comes out clean then they are ready! 9. Allow the muffins to cool before transferring out of the tin. 10. Eat them☺️

Makes six muffins. Feel free to double the recipe for more! Ingredients: ½ cup brown sugar 1/3 cup melted vegan butter ½ cup plant based milk of choice 1 cup gluten free self raising flour or regular self raising flour ½ vegan chocolate chips
Method: 1. Preheat oven to 170C and grease a muffin tin. 2. In a bowl, whisk together the melted butter and brown sugar. 3. Next, whisk in the milk. 4. Stir in the flour, followed by folding in the chocolate chips. 5. Pop the mixture into the prepared muffin tin (¾ mixture into each spot) and bake in the oven for 25 minutes. 6. Remove from the oven and allow to cool before eating, enjoy xxxx
PANCAKES!! Made with banana flour hehehe🍌🍌🍌🤗 Banana flour is made from young green bananas, is gluten free and absolutely amazing for you. It also happens to make the most delicious, fluffy pancakes. I had mine with strawbs, banana and melted dark chocolate of course✌🏼Let me know if you try these💜 Recipe makes one big serve or two small! 1 & ½ cups Banana flour 1 & ¼ Almond milk mixed with 1 tsp vinegar 1 very ripe banana, mashed 1-2 tbsp coconut sugar (optional - I’ve got a massive sweet tooth😛) 2 tsp baking powder 1 tsp cinnamon (optional) Whisk or blend the ingredients until combined, pour into a pan on the stove top at medium heat. Method: 1. Preheat oven to 170C and grease a muffin tray with coconut oil/spray. 2. In a large bowl, whisk together the melted butter, sugar and coconut essence. 3. Next, whisk in the almond milk. 4. Gradually mix in the cacao and flour, followed by the desiccated coconut. Then lastly, fold in the cherries. 5. Pop into the muffin tin and bake in the oven for approx 30 minutes until golden. 6. Remove from the oven and allow the muffins to cool down before taking out of the tin! 7. Top with melted chocolate (I used ‘Sweet William’ from Coles) and extra coconut if desired. Enjoy!!! Blueberry muffins🍇 Gluten free and vegan😊 Makes approx 10 Ingredients: 1/4 cup melted vegan butter or coconut oil 1/2 cup raw sugar 2/3 cup almond milk (or any other plant based milk) mixed with 1/2 tsp white vinegar 1 tsp coconut essence (optional) 1 & 3/4 cups gluten free (or regular/wholemeal) self raising flour 1 cup fresh or frozen blueberries Method: 1. Preheat oven to 170C and grease a muffin tray with coconut oil/spray. 2. In a large bowl, whisk together the melted butter, sugar and coconut essence. 3. Next, whisk in the almond milk. 4. Gradually mix in the flour and lastly food in the blueberries. 5. Pop into the muffin tin and bake in the oven for approx 30 minutes until golden. 6. Choc chip cookies💩 Vegan & GF💦 Makes approx 10 Ingredients: 1/3 cup + 2 tbsp vegan butter alternative 3/4 cup brown sugar 1 cup plain gluten free or regular white/wholemeal flour - Buckwheat, teff, spelt, oat, sorghum would also work😊 1/2 cup choc chips Method: 1. Preheat the oven to 170C and line 1-2 baking trays with baking paper. 2. Melt the butter slightly, and mix with the brown sugar in a large bowl. 3. Stir in the flour. 4. Add the choc chips and combine. 5. Form into cookies (makes approx 8-10) and place on the prepared trays. 6. Bake in the oven for 16-18 minutes until golden! 😛🍫🍪

Chocolate brownie muffins🍫💦 Gluten free, Vegan and nut free depending on what plant based milk you choose to use☺️ Makes 12 small muffins Ingredients: 1 cup gluten free self raising flour 1/3 cup raw cacao or cocoa powder 1 cup coconut sugar 2 tbsp coconut flour 1 flax 'egg' (1 tbsp flax meal mixed with 3 tbsp water) 1 cup plant based milk of choice Optional add ins: Chopped mixed nuts, chocolate chips, raisins etc Method: 1. Preheat the oven to 170C and grease a muffin tray. 2. In a large bowl, sift in the flours and cacao powder then stir in the sugar. 3. Next, stir in the plant based milk. 4. Mix in the flax 'egg', followed by adding in any chopped nuts or chocolate chips if desired. 5. Evenly distribute the mixture into the prepared muffin tin. 6. Bake in the oven for 20 minutes. 7. Allow the muffins to cool before eating! Drizzle with melted chocolate or add icing if you like❤️
Vegan and gluten free cheesy potato bake! Ingredients: 1 & 1/2 cups soy milk 2 tbsp vegan butter 2 tbsp gluten free plain flour 1 tsp ground turmeric 1 cup shredded vegan cheese + 1/2 cup extra for layering Salt and pepper Herbs of choice 4 medium-large white potatoes, thinly sliced Method: 1. Grease a medium oven proof baking dish and preheat the oven to 180C. 2. In a small sauce pan, combine the soy milk and butter. Place the saucepan on the stove top and whisk these two ingredients together on medium heat. 3. Add the turmeric and flour into the mixture, continue to whisk. 4. Once the mixture starts to boil, mix in the 1 cup of vegan cheese then turn off the heat. 5. Place down one layer of the thinly sliced potatoes in the prepared baking dish. Add some salt and pepper, herbs if you like and a sprinkle of the extra 1/2 cup cheese. Pour over some of the cheesy mixture from the stove top. 6. Continue this process until there is no more potatoes, cheese and cheesy mixture left! 7. Top with your fave herbs if desired, and bake the dish in the oven for approx one hour and 10 minutes. 8. Remove from the oven and serve! So yum when it's hot :)
