âSpilled salt always gets thrown over my left shoulder. Force of habit, my mother ingrained it in me. There is salt all over my kitchen,â A small burst of laughter escaped before she continued, âItâs a mess. Thanks mom.â Follow me @Noraskitchen
âHonestly,â Emmy said, âBetween you and Gio, I literally never have to cook. I just wanted to make something nice for you.â She wasnât entirely bothered about the pan, but Noraâs instructions sounded more complicated than âthrow it out and replace itâ which in turn made her lips curve in a frown. âIâll do that later,â she promised loosely, tossing a particularly large puff of popcorn for Gram to chase. The grey cat did just that, skittering along the tiles as he batted it along. âGod,â Emmy noted, getting up to peer into the pan, smelling the contents before nodding. âWhen I grow up, I want to be just like you.â Eager to do something to help, the brunette pulled the ingredients from Noraâs bag as she instructed, setting them aside. âI was thinking about getting a little pot of mint and basil for the window,â she said, putting the baggie onto the counter before making her way to the microwave. Leaving it inside the Tupperware she set it up to reheat, leaning back against the counter. âMy aloeâs looking really good, and my vines have never looked better. Maybe living alone is good for me, keeps the energy in here centred. I should get crystals, commit fully.â
âBut you love my cooking more right?â Nora joked, fully aware Gio had a weird competitive flair when it came to her and Emmy. She rolled her eyes at the response about the pan as the grey fluff-ball of a cat darted through her legs, hunting popcorn for prey. âHate to break it to you babe, but youâre just as grown up as I am.â Her had darted out to snag the canister of red pepper flakes that stood ready and waiting next to the stove as she sautĂŠed the tomatoes that were beginning to brown around the searing chicken in the pan.Â
âA little herb garden would be nice, but then you would need to start cooking, otherwise it would all go to waste. And please donât buy into the crystals nonsense. The only thing that crystals actually âtellâ people...is to buy more crystals. â She left her position at the stove to hit stop on the microwave just before the incessant beeping would have filled the kitchen. Pulling out the container she tossed it onto the counter, the edges of her finger tips stinging from getting nearly burned from the steaming Tupperware. âToss some of that parmesan leftover from last weeks dinner will you?

Nora set up her small folding table close to the staircase entrance, on the opposite side of the roof deck where the freestanding movie screen was showing a cheerleader fly through a pastel blue sky. The title screen of But Iâm A Cheerleader faded in as small cheers rippled across the crowd. A small smile played across her face at the sound as she reached into the reusable whole foods bag sitting next to her feet, pulling out a large rectangular tupperware. Placing it gently on the table, she snapped off the lid to reveal an array of baked goods, all iced in neon and pastel rainbow flair.  âMagic brownies!â She called out brightly to the crowd, âTaste and experience the rainbow! None magic items also available!âÂ
âIt was just like, a tiny little fire,â Emmy insisted, perched on top of the counter as Nora moved about her small kitchen. âYou literally wouldnât have noticed it if it wasnât for the smoke. No harm done.â She was working through a bowl of popcorn that sheâd propped up on her lap, ignoring Gramâs mews as he paced on the tiled floor below her. âNot worth you coming all this way to make me dinner, I swear.â She leaned back on one handâ grinning. âBut now that youâre here, I definitely wonât complain. What are you making and does it go with twelve dollar wine, because thatâs all Iâve got.â
Nora threw Emmy a dark look over her shoulder before turning back to the stove, flipping over the chicken cutlet that had reached that perfect warm brown color. The sound of sizzling oil and butter filled the room. âYou shouldnât be cooking things with alcohol if you donât know how to put out a kitchen fire, dude.â She glanced warily at the charred pan left abandoned in the kitchen sink.  âYouâre gonna have to soak that with warm water and baking soda overnight if you want to save it.âÂ
She paused briefly to take a quick over head picture...well six pictures at slightly different angles to be precise. Her frown quickly melted away into a small smile as she turned to get a snap of the desecrated pan as well. This will be something funny for the story.  âEverything I make pairs quite well with twelve dollar wine, itâs a specialty of mine. Itâs that undefinable magic of Trader Joeâs ingredients. We can call this twenty minute florentine butter chicken with burst cherry tomatoes.â Nora laughed lightly before continuing, âAlso known as, throwing the leftover ingredients in my fridge together. I had to use up these tomatoes anyway. Can you get the container of cauliflower mash out of my bag and throw it in the microwave? Oh, and there should be a little baggie of fresh basil in there as well.â

Nora grew up in North Jersey and moved to NYC after her senior year of high school to study journalism at NYU
Sophomore year she realized her desired lifestyle far exceeded her meager savings account, so she took a job at a popular coffee shop among students to make some extra cash, showing up at 5 am each morning to assist the baker preparing the daily fresh breads, pastries and bagels.Â
The job peaked her interest in food, and she began her food instagram her near the end of her sophomore year called @noraskitchen, where she made tasty one pan dinners on a hot plate in her dorm room. Initially her only followers were her overly supportive friends, but by the end of her junior year, the blog videos actually gained some traction on campus, and she had a huge influx of followers from her fellow NYU students.
Senior year she gave up a lot of partying and fun nights with friends to work in a kitchen, picking up a job at a small but popular restaurant in Greenwich Village. The job really helped develop her basic skills and techniques, which all came into play with insta videos. She quote, unquote, went viral right before graduation, when a celebrity found her videos and put one of her videos on their story. The popularity that followed was quite overwhelming.
In her videos she often appears slightly frazzled as she cracks self deprecating jokes  in peak millennial humor, always very clearly having a great time with herself while she created delicious and usually uncomplicated food.Â
After graduation, she began to work and train in the kitchen full time under the same talented chef while she half heartily hunted for a job in journalism. She began to consider doubling down in her insta career when she got a call from Time Out magazine who had seen her instagram, offering her a bi monthly recipe column to follow their restaurant reviews, along with alternating postings in the food & drink section on their online presence. Without hesitating she took the job, leaving the kitchen that trained her to continue the brand of âNoraâs Kitchenâ.
Now she balances writing for Time Out and putting out daily content on her instagram. She rarely sleeps more than five hours, and is attempting to live that life of having your cake and eating it too. She moved to Crown Heights shortly after quitting the kitchen. She is a hustler who is occasionally manic and often stressed, but sheâs always doing her best.
She has an older brother who moved to New York City a few years before she made her own way there. They meet up once a month to take the train to Jersey together for a Sunday dinner at home, and usually end up grabbing lunch together once or twice between trips home.Â
After sharing her apartment with a "lifestyle bloggerâ who she met through a self-marketing class for a year, Nora briefly considered leaving Crown Heights because she couldnât take the gut wrenching guilt of telling the girl should couldnât bare to resign the lease with her. However âdestinyâ (a direct quote from Veronica) intervened and her ex-roommate decided to go backpacking and eat pray love her way through Thailand from the gram. Nora dropped Veronica off at JFK with a grin before turning around to go pick up an old friend from college, Julius Rowe, who was going to move into her newly empty room that same night.Â
She also picks up extra work at the Bean Brew to make some extra cash, baking fresh muffins, scones, pastries and occasionally bagels twice a week.Â
