Carrot Souffle

2 pounds carrots

4 eggs, sperated

1 stick butter or margarine softened

2 heaping teaspoon flour

2 heaping teaspoon baking powder

1 cup sugar

1 tablespoon vanilla extract

Powdered Sugar

Boil carrots in water until softened. Drain and place in a food processor. Add egg yolk, butter,flour,baking powder, sugar, and vanilla. Blend until well mixes. Beat egg whites until stiff and fold into mixture. Pour mixture into a 2-quart glass baking dish. Bake at 350 degrees for 45 minutes. Remove from oven and sprinkle with powdered sugar. Serve warm
