My daughter is allergic to dairy and eggs so I have been cooking meals without these major ingredients for almost six months now. Here is a recipe for muffins that our whole family enjoys.

Ingredients:

1 large apple, peeled, and cut into 1/2 inch cubes

1 cup and 2 tablespoons white flour

3 teaspoons cinnamon

2 teaspoons baking powder

1 teaspoon ground nutmeg

1 medium banana, peeled and mashed

3/4 cup white sugar

1/2 cup soy milk, room temperature

1/3 cup coconut oil, melted

Preparation:

Preheat oven to 400F. In a small bowl mix together apple cubes, 2 tablespoons of flour and 1 teaspoon of cinnamon. Set aside.

In a large bowl combine 1 cup of flour, 2 teaspoons of cinnamon, 2 teaspoons of baking powder and 1 teaspoon of nutmeg. Mix all ingredients together. Add banana, sugar, soy milk and coconut oil. Mix thoroughly. Add apple cubes and mix again until the dough is even consistency.

The last stop on my trip was St Andrews - the town and the university.

Hiked the Old Man of Storr, tasted Talisker Scotch and dined at the Three Chimneys. Lovely scenery.

Edinburgh is magnificent and weather cooperated. Visited The Edinburgh Castle and walked the Royal Mile. Few of my favourite pictures.

We spent 4 days in Vienna. Visiting Schonbrunn Palace, Albertina Museum, St.Stephen’s Cathedral, The Leopold Museum and other historic sites. I loved eating delicious cakes in Vienna cafes and stroll in the parks. We also saw an opera in Theater an der Wien. Few pictures are below.

Went to Hallstatt today. Hiked to the top instead of taking a funicular and enjoyed packed lunch with this view.

Went back into town and took few famous shots of the town.

And then rented a boat and enjoyed a romantic ride on a lake.

Woke up to this view from our hotel room.

Took a stroll in the Old Town and toured the fortress.

Drove through Bavaria yesterday - very picturesque countryside. Onion dome churches, red brick roofs with solar panels and the rolling hills.

Visited Neuschwanstein Castle.

Started out at the Lenbachhaus and found myself in Kandinsky Heaven.

Plus few other new favorites.

Then we had lunch at the museum’s cafe Ella and a walk in the garden.

Off to walking in the Old Town
