This was my dinner tonight, and omg was it amazing.
Roast sweet potato, baked shredded salmon, spinach, sundried tomato, cucumber, avocado, artichoke and a little juice from the artichoke jar drizzled over the top.
The great thing about working for a home-run cookery and nutrition company is that when you’re there, you can nick swanky ingredients from the kitchen and make yourself awesome lunches :P
Eating healthy just got a whole lot easier!
