My Broke Kitchen

But still cooking - prepping - making the most of things and reducing waste.

I took it nice and slow..

- tended to my egg in the pan

- enjoyed the slow slicing of the banana

- picked out my favorite few leaves of spinach and placed them one on top of the other before slicing them into pretty little strips

2 room temp eggs

Add to food processor or emulsion blender and blend for 20 seconds

Add 1 tablespoon lemon juice

Add 1/4 tsp salt

1 tablespoon ranch dressing

Blend blend blend

Then sloooooowly add oil (canola) slow slow until it starts to look creamy. Then can add faster - 2 cups total.

Viola! Good in the fridge for a week 👍

Pair with dino nuggets on toast with shredded raw broccoli - yum!

Only had two ripe ripe bananas for banana bread. I looked up substitutes and found sweet potato can be used. I just happened to have some mashed sweet potato leftover from dinner.

••• Olive Tapenade

No trip to the farmer’s market this past weekend makes my kitchen duller. I’ll probably go to Whole Foods for lettuce, broccoli, zucchini and maybe some carrots...to help my fridge feel fuller.

Tonight’s “Broke Fancy” is

-Trader Joe’s ravioli - anykind you like - they have a lot of choices.

-canned corn

-sourdough toast with olive walnut spread - here’s where it get’s fancy. Canned olives, olive oil, salt, pepper, walnuts in the food processor - and spread.

The rap I made up while making the cereal fight:

Cereal flight - that’s right - my man’s not very hungry tonight.

I’m like cool - now I don’t have to cook a broke ass meal - alright!

Throw some berries on the Rice Chex cuz without it that stuff can be real boring - Half a banana on the Heritage Flakes under a bowl the other half will be storing.

These dumbass dishes are done dude. Re-using farmer’s market plastic hummus tubs for our lunches and the open cat food containers. Don’t put them in the dishwasher - don’t put food in hot. Check out that sexy Keepcup in the corner.
