Sorry this ended up being a ridiculously long response. BUT it covers the whole ground, and that's what matters 2 me :)

Here's the thing. I absolutely do not think he would LISTEN Rammstein at all. He strikes me as not at all industrial metal guy. But if you're going to put Sonne on a "Varka from Genshin Impact Spotify playlist" then yeah that's a solid and very general option. However, I think he'd be put off by a lot of the content present in their songs.

I also think that they just feel very removed from the setting of Genshin, so it's hard to say whether or not anyone "would" be listening to them. The particular social and political topics they tend to very loudly highlight aren't present or have already been dismantled within Genshin's world, so there's way to infer how any characters would take songs like "Mein Teil" or "Pussy" or "Deutschland" or "Zick Zack" or "Links 1 2 3" in a universe where those ideas aren't present in the first place (very intentionally on behalf of Mihoyo's writing team for Genshin in rehards to the 3rd and 5th songs especially).

As to what he WOULD listen to, particularly in regards to German bands, I dunno exactly! Lol. I think the beefed up Favoniuslied in his story quest (the "liiiiiebling komm und taaaaanz miiiit mit uuuunter dem Mooooond" one) and his trailer give a pretty consistent, solid ground, though, especially considering the Favoniuslied in Nod-Krai is diagetic, so Varka himself would know it personally and be singing it at times.

He's actually not got any metal in his songs at all. It's more jazzy and orchestral, especially with the brass in the Favoniuslied iteration from his quest and acoustic guitar in his trailer. For a dual-wielding claymore DPS with his own massive beefy character model, he's got pretty soft music! So I could see him listening to that same sort of tune.

That being said, while industrial metal feels like more of a Fortress of Meropide thing, I could see specifically those fun cringey medieval-style power metal bands with a metric crap-ton of songs that are like "We're knights and that's cool as hell! Let's drink about it!" "We're fighting for freedom from tyranny and drinking about it!" "We're free like the wind itself! Yeahhhh, let's drink about it!" filling up a Varka playlist, but possibly his own radiant spincrystal library too (which is why I mentioned dArtagnan & Feuerschwanz in particular, both especially and despite how campy they are) :P
