Seafood Sweet Potato and Ricotta Gnocchi with Garlic Olive Oil
Makes 8 Servings 25c/12f/25p
Ingredients:
Garlic (to preference, I like a lot!)
1 16oz Container Whole Milk Ricotta Cheese
3 Tbsp Olive Oil
2 Bags Trader Joe’s Seafood Blend (use whatever protein you want)
1.5 cups Whole Wheat Flour
6oz Sweet Potato
Steps:
1. Cook seafood or chosen protein and set aside.
2. Cook sweet potato in microwave for 5-10 minutes until soft and skin falls off easily. Measure out the appropriate amount then mash in a large bowl.
3. Add the ricotta cheese to the potato mash and mix well. Add flour and mix until you get a doughy texture. Feel free to use more potatoes or flour as you prefer or if you would like to increase the amount of carbs.
4. Set a pot of water with some salt to boil on the stove.Â
5. Cut up the garlic and add to a large pan on medium/high heat with 3Tbsp of olive oil. Once the pan heat up, feel free to sear the seafood in the garlic oil.
6. Piece the gnocchi dough into whatever shape you prefer. I’m pretty lazy so I roll it out and slice it up.
7. Add the gnocchi to the boiling water. Remove it with a fork or spoon with holes after 2-4 minutes as soon as it starts to float. Throw the gnocchi immediately into the pan with oil and garlic to create a bit of a sear.
8. Divide into 8 servings and enjoy!
