It’s a biological fact that fish do indeed change their sex to keep the male/female ratio balanced in their school population. So this fluidity actually makes more sense from a scientific standpoint than the silly idea that merfolk are born with a strictly assigned sex like humans.
Merfolk are all canonically genderfluid and we love them for that

Merfolk: oh man, there are a lot of women here. Haha don’t worry guys, I got this :) *changes into a man to keep a balance because that’s culturally polite for merfolk*

So in the presence of a ship with an entirely or mostly male crew, nearby mermaids would become female to keep the balance.

Marine biology enthusiast here! This is really fun and I just want to add some notes. There are actually 3 different kinds of sex changes that fish can do, and in line with the proposed mermaid theory, they would be expierencing bidirectional hermaphroditism, in which a sex change occurs when two members of the same species meet but they’re both the same sex. The important thing to note is that, unlike the other two types this one typically allows for changes multiple times (the other two are mtf or ftm permanently), and allows for the flexibility of the condition being meeting a member of the opposite sex (as opposed to loss of the dominant male or female).
