3 cups lightly steamed and chopped broccoli
1 oz cream cheese, softened
1 1/2 cup cheddar
1/2 cup parmesan
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 eggs, beaten
2 tablespoons coconut flour
1 teaspoon baking powder
1. Preheat oven to 400 degrees F.
2. Steam the broccoli, chop lightly and remove the tough stems.
3. In a medium-size mixing bowl combine the cream cheese, cheese, spices and eggs. Stir in the broccoli.
4. Fold in the flour and baking powder.
5. Chill dough 10-15 minutes to allow the flour to absorb the moisture, DO NOT SKIP THIS STEP.
6. Spoon into a silicone mini muffin pan.
7. Bake 12-15 minutes.
