Home therapy: snuggle time with the foster rats, Apollo and Creed. These boys were rescued from euthanasia at a lab, but their former owner didn’t have space and time for their enrichment. So I’m helping them get used to being ratties again.

Went to Starbucks and somehow they ALREADY had run out of peppermint syrup. So I made my own: 1 1/2 cups ice, 3/4 cup soy milk, 1 tablespoon chocolate syrup, 1 tablespoon sugar, 2 teaspoons cocoa powder, 2 teaspoon Starbucks medium roast instant coffee, 1/2 teaspoon peppermint extract. Blend it up and top with whatever dairy free deliciousness is hanging around the kitchen.

You may wonder why I didn’t just use more chocolate syrup. Cocoa powder makes it frothier, preventing ice clumps in the final product. And nobody wants a clumpy frozen coffee drink.
