Tuscan white bean soup,The Perfect soup for this chilly weather.Â
-600grs of organic cannellini or great northern beans ( or 2 cans) -250 grs (1/2pound aprox) of pancetta or bacon. - one medium onion chopped - 2 garlic cloves - 1 rosemary spring.Â
Boil 4 cups of water in a pot and place the overnight soaked beans and the garlic cloves in it , reduce the heat to medium and let the beans cook for about 45 min, Check occasionally if you need to add more water. Add salt once the beans are tender. Â
Cook the chopped pancetta or bacon in a skillet and once is done add the onion until brown gold. Add the onion and pancetta to the beans and turn the heat up to high. Once boiling turn the heat down to medium-low and add the rosemary spring.  Smash the beans to thicken the soup and let it simmer for 15-20 min. Serve hot, top with shredded cheese and warm bread for dipping.Â
