April: One of my resolutions for 2015 is to (each month) tackle an "intimidating" recipe from my cookbook collection. I'm a few days late for my April goal, but today I attempted Michael Chiarello's smoked and braised short ribs. 10 hours of brining, cold smoking, and braising, served over polenta with roasted balsamic onions and smokey jus. 😍 They literally fell off the bone, and had the richest flavor. #michaelchiarello #shortribs #polenta #bottega

(March) One of my 2015 resolutions is to tackle a recipe from my vast cookbook collection. AGAIN, it took me until the very end of the month! This month, I chose my Rustic Italian Food cookbook from Chef Marc Vetri. Lauren and I visited Vetri (in downtown Philadelphia) in December of 2011 and it was my first "big foodie experience"... a 10+ course tasting menu...the most $ we'd ever spent on dinner...only 10 tables in the restaurant...4 hour experience...and when the hostess sat us, she said "Justin Bieber and Selena Gomez dined at this table last week!" It was a game changer for me! Also: Philly! 😍 So, tonight I made Chef Vetri's Spaghetti in Parchment with Clams and Scallions.
