THE BEST CUPCAKES: these are the best carrot cupcakes I have ever baked not to forget they are butter and sugar free😬 Here is the recipe 200gm Sugar free Maple Syrup 180ml organic coconut oil 70gm yoghurt 3 eggs 2 tsp vanilla 260gm all purpose flour 1tsp baking powder 2 tsp cinnamon powder 1/2 tsp salt 300 gm finally grated carrot Mix all dry ingredients in a bowl Mix all the wet ingredients in a separate bowl, whisk it for 4-5 mins or until mixed properly ( do not over whisk it) Add dry ingredients in wet and mix it well. Remove all flour pockets. Now mix grated carrot in the mixture, fold everything together This will give you 20 cup cakes line the cupcakes and fill it 3/4 and bake at 160 for 20-25 mins. Once again the time also differ based on your oven. Do not over bake it. Let it cool completely before adding frosting. Cream cheese frosting 200 gm cream cheese 1tbsp heavy cream 30ml Maple syrup or if you want you can add confectioner sugar 150 gm Heavy cream 30 ml Vanilla 1 tsp Salt 1/4 tsp (optional) Mix all the ingredients and whisk it well.
