Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/4 cup coconut sugar. 2 tsp ground ginger. 1 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp baking soda. 1/4 cup molasses. 1/4 cup melted coconut oil. 1 tsp vanilla extract.
Instructions: Preheat oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, mix together almond flour, coconut flour, coconut sugar, spices, and baking soda. Add molasses, melted coconut oil, and vanilla extract to the dry ingredients, and mix until well combined. Roll the dough into small balls and place them on the prepared baking sheet. Using a fork, gently flatten each ball to form a cookie shape. Bake for 10-12 minutes, or until the edges are golden brown. Remove from oven and let cool completely before serving.
