Have you ever made French toast in the slow cooker? I used my Paderno 6-Quart Slow Cooker to do just that! Think bread, egg and cream slow cooked into the most luxurious breakfast treat!Ā
Whatās not to love about this comforting weekend dish that allows you to eat dessert for breakfast when itās made with tender and rich French brioche soaked in a sweet vanilla custard? Itās the perfect way to transform a loaf of bread into something magical, especially when itās filled with fresh local peaches and raspberries. Tip: Soak the bread overnight, giving the custard plenty of time to soak into the buttery cubes of toasted brioche. The casserole then gently cooks in the slow cooker to produce pudding-like results, loaded with the warmth of cinnamon, nutmeg and sweet summer fruit.
Tip: To skin the peaches, drop them one at a time in boiling water for 30 seconds and then ice water for 10 seconds and gently peel away the skin. I did this in my Canadian Signature 28 cm Fry Pan.
Peach Raspberry Slow Cooker French Toast Casserole Ingredients 10 cups French Brioche loaf, cut into cubes 6 large eggs 2 cups table cream 1 cup milk (I used 2 %) 2 tsp pure vanilla extract 3 tbsp granulated sugar 2 tbsp brown sugar 1 tsp ground cinnamon ½ tsp ground nutmeg ½ tsp kosher salt 2 cups peaches, skinned and cubed (reserve 1 cup for serving) 1 cup fresh raspberries (reserve ½ cup for serving) Powdered sugar, for sprinkling Pure maple syrup, for topping
Directions Heat oven to 350°F. Cube brioche bread and place on parchment-lined baking sheets spread out in a single layer. Bake for 15 minutes until bread starts becoming crispy but not too brown. Remove from the oven and allow to cool. While the bread is in the oven, skin the peaches ā see my tip in the post above. Whisk together the eggs, cream, milk, vanilla, sugars, cinnamon, nutmeg and salt. Pour custard mixture over the bread in a large bowl and mix gently. Gently mix in the peaches and raspberries. Let sit for at least 10 minutes, but it is better to refrigerate overnight.
