Keto LC Meatball Parm
Meatballs
1.5 lbs ground beef ½ cup almond flour ¾ cup Parmesan cheese 2 eggs Lots of Italian seasonings
Combine all ingredients and form about 15 meat balls.
Brown with bacon grease or oil in cast iron to get crispy or cook on oven to get soft texture.
When meatballs are cooked pour tomato sauce over meatballs in pan and cover with mozzarella cheese.
350 degree oven for 25 minutes
Let cool.
Delicious solo or over zoodles or spinach.

Keto Convenience
I spent a lot of Sunday cooking, prepping, and simply looking up delicious keto recipes to try on my poor unwitting family. I thought a lot about that today, and I slowly realized that I used to be the queen of convenience. Fast food, restaurants, frozen meals, and the cafeteria where I work were all my chef. And man, my body sure knew it- I gained 110 pounds in the 5 ½ years my husband and I had been married, and blame every bit of it on my craptacular diet.Â
Yes, fast food sure is easy, but surely there are some keto kitchen items that make life more convenient, right?Â
Absolutely.
Of course food processors are a modern miracle and the microwave saves my foodie ass from digging out leftovers from the fridge and calling it a meal when we fail to plan dinners, but what about the convenience items that aren’t quite so well-known? I have a few. These are all items I currently have in my kitchen and I use (weekly, if not daily.)
1. An Egg Cooker
It isn’t hard to explain exactly why egg cookers were the first thing I thought of for this list. By and far, this little $17 appliance has kept me on track so much. They can make soft/medium/hard-boiled eggs, scrambled eggs, and omelettes in minutes with minimal cleanup. Seriously. It is so easy to pop a few eggs into this bad boy in the morning, and 10 minutes later you have breakfast. You set it and forget it–it’ll let you know when your eggies are done. I usually make 6 or so hard-boiled eggs at a time just to have in the fridge. They’re great by themselves and it’s also awesome to be able to make deviled eggs whenever you want.
2. A Spiralizer
Zoodles, guys. Zoodles. Zucchini Noodles- they open up a whole host of meals that are usually cut out of LCHF meal plans. Spiralizers are fun to use, so whenever I break it out my husband jumps up from his recliner to “help me with dinner” - he loves to spiralize up some zoodles for a quick “pasta” dish for me. Thanks hon. I have this particular one and it works great.
3. A Cheese Slicer
A cheese slicer? Is she serious? How did this make the list?? Hear me out. Meat, cheese, and cucumber slices make super-easy snacks, lunches, and full-on meals (especially when the weather gets hot and no one feels like standing over a stove.) I use our cheese slicer almost daily for our lunches, and it’s convenient for slicing all those cucumbers, too. The cleanup is practically non-existent. But why not use a knife? It is difficult to get a knife to cut cheese in thin, even slices, and I am impatient.
I glad that we’re cooking nearly all of our meals from scratch now, and thanks to LCHF eating I actually have the energy to do it now. Convenience is still, well, convenient though, and it’s nice to have some items around the kitchen that make life a little easier for us LCHF-ers.
Kitchen clutter drives me nuts so I am super strict about not accumulating appliances/utensils I don’t need but every now and then there’s one that just makes life so much easier and keto much more enjoyable. I have an automatic pressure cooker, that veggie spiraliser and an egg slicer.

This week is a lot of more of the same. The artichoke dip we didn’t end up making last week, so we’re using the ingredients this week. We are absolutely slammed with (fun) social stuff this month, so most weekends our dinners are out or at another’s home, so my normal experimentation with new recipes are at a minimum this month.
