Ingredients: 1 cup creamy peanut butter. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1 teaspoon instant espresso powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup chocolate chips. 1/4 cup chopped roasted peanuts.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put peanut butter, white sugar, and brown sugar in a bowl and mix them together until they are well mixed. After you add the egg and vanilla extract, mix it in until it's smooth. Mix the instant coffee powder with a teaspoon of hot water, then add it to the other ingredients. Combine well. Add the salt and baking soda to the mixture and mix it in until it's all mixed in. Add the chocolate chips and peanut butter pieces and mix them in. Place tablespoon-sized chunks of dough about 2 inches apart on the baking sheet that has been prepared. Make a crisscross pattern in each cookie by gently pressing it down with a fork. After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way.
