Crustless Spinach Quiche
I adapted this recipe from my Aunt's recipe for a crust less spinach quiche. I tend to like more spice than her, so I have added a bit more heat. I also happened to have some fresh mozzarella I needed to use up, so I reduced the cheddar from 2 cups, down to 1.5. I used .5c of mozzarella to make up the difference.
4 eggs 1 small onion, chopped 1 cup cottage cheese 1 (10 oz.) pkg. frozen chopped Spinach, thawed and drained 3 Tbsp. grated Parmesan 1.5 cups shredded sharp cheddar cheese 1/2 cup of shredded mozzarella (I used fresh since I had it)
3 Tbsp. butter (melted) 3 Tbsp. flour ½ tsp garlic powder 1 tsp crushed red pepper flakes 1 tsp pepper ½ tsp kosher salt 2-4 dashes of hot sauce
Preheat oven to 350 degrees
Mix together: eggs, onion, spinach, shredded cheese, cottage cheese, and Parmesan. Melt butter and stir in flour, garlic powder, salt, pepper, crushed red pepper and hot sauce. Add to the egg mixture. Spray an 8 x 8 pan with nonstick spray. Pour mixture into pan and bake at 350 for 50 - 60 minutes.
