Yall really don’t understand the power of soup. You want a healthy meal for rock-bottom beginners?? Veggie soup. Just try it. This is how you do it my way:
You get your big pot. I have one that’s like 5l. You throw in one chicken leg or wing or whatever meat you want. And if you don’t want meat you can throw in one of those fun cubes of soup flavour. I don’t know what they’re called. Mine look like this:
Then, you pour in water, about ¾ of the pot. Add salt and pepper. Bonus points for dried mushroom (one or two will do). (I don’t eat mushrooms, I hate them, but they’re great for the soup). Don’t worry if you don’t have it, it’ll do without it.
Open the fire under the pot and leave.
Now comes magic - the veggies. It’s the veggie soup, you can add anything you want. Common stuff include: carrots, parsley root, celery root, leek, potatoes. BUT. Why stop there? What do you have in the fridge? Are there any plants that need to be eaten asap? You can throw in things like: green peas, string-bean, broccoli, cauciflower, pepper in whatever color you want (not the spice). It’s your soup!
Do whatever you want! Yesterday I felt bad about throwing away radish leaves. So what did I do? I asked my mom if it’s cool to cook them I threw them into the soup! (radish leaves are tricky bastards cause they can be bitter and destroy your soup with no effort, I recommend pouring them with boiling water before adding to the pot).
You can add brussel sprouts if you like them (I don’t like them). You can add turnip. You can add kohlrabi (I didn’t know it’s called like that in english lol). Literally. Anything you want.
You should totally chop some parsley leaves and/or dill into this. Trust me.
So, take your veggies, wash them, and cut in pieces. I like to slice the parsley, carrots and leeks, and cube the rest.
Throw everything in the pot, BUT potatoes and broccoli flower should wait about half an hour and join then so they’re not too soft.
Leave the soup for an hour or so. Just don’t forget about it completely. And ta-da! It’s done and you now have 5 liters of soup. You can feed yourself, your family, your neighbours and some random people too if you want.
Protip: if your soup is too sweet blame the carrots add salt. NOT PEPPER unless you like spicy sweet food (I don’t). Salt will do. You probably will have to add some anyway cause vegetables LOVE salt and slurp it in like maniacs.
