ある日の家ごはんの記憶。特別なにかあった訳ではない日のことだと思う。だけど、丁寧に楽しんで料理をしたんだろうな。オランダに来てから、自分のために、おかずを複数作ってないや。この家のキッチンは本当最高だった。いい野菜もすぐ手に入った。 煮浸し、菜っぱの蒸し煮、ごぼうきんぴら、小豆とキヌア入り玄米ごはん、味噌汁。 キッチンに立つことがすき。つくることがすき。

アムスのオーガニックビュッフェレストランでの仕事も無心で取り組んでる。修行のような量の野菜を仕込んだり、ひたすらルーティーンワークだけど、苦じゃない。野菜に触れたり、対峙することで、エネルギー交換をしてる。

Here you can have a kick start meal of the day like charging smoothie to freshment end of the day. It’s located in Oranienstraße, heart of Kreuzberg.  They treat gluten-free Vietnamese sandwich, soap, Bolognese, raw cake. I picked up sweet potato soap accented chill and spicy that was amazing.

カフェ、レストラン、ショップが軒並ぶ中この大通りでは、どの店舗でも大抵ビーガン対応の食事は取れる。しかし、比類なき「ビーガン専門」という大看板に安心したのは私だけではなかったはずだ。雑踏からガラス一枚を隔てた小さなカフェ空間は、ほっとする時間を提供してくれた。1日の始まりにふさわしいスーパーフードミックスのスムージーからローケーキ。ベトナム風グルテンフリーサンドイッチ、ボロネーゼパスタといったメインミール。 私はスイートポテトのスープをいただきました。甘さの中にチリとスパイシーなフレイバー。※現在は閉店

Healthy power fast food place must be our friend! Here offers some types of veg-focused bowls, wraps＆pitas, salad and soup. You can also customise your own’s like gluten or lactose free option.

On this day, I sat outside and ate protein bowl (Butternusskürbis, Quinoa, Chili-Brokkoli, Zitrone, Edamame-Erbsen, Rote Bete, Minze, Mandel) . Boosted up!

Sfizy veg – vegan pizzeria und restaurant in Neukölln, Berlin No doubt. Here you can have a lot of varieties of vegan pizza such as gorgonzola, formaggi chorizo etc...  It sounds so fantastic, isn’t it? 

I’m sorry for crappy photo. I assure the taste of crispy crust Italian chef made and topping. I was hesitating to up for photo quality but let me introduce because this speciality is second to none.

Me and my friend shared blue cheese, rucola and wall nuts, and quattro one with mushroom and olive.

At De Bolhoed, Amsterdam.

It’s located alongside a canal in Jordaan. I suppose here has long history from the dawn of vegan movement in Amsterdam and warm heart as good as house style dishes. 

The combo plate I ordered in the late afternoon was too good enough to fill my emptiness. Sauted seitan with Béchamel sauce, beans and vegetables tomato stew, grilled cauliflower, salad and pilaf.  The detail of them evoked nostalgia pleasantly.  While eating them, I found out an array of cakes looking worthy of being called Devils’s something in showcase that seduced me to go for. 

ヨルダン地区にある、De Bolhoed。ビーガン＆ベジムーブメントがジワジワと興隆しているこの街に於いて、老舗ビーガンレストランの趣がある。雰囲気も料理もどこか懐かしく、温かく、家庭的だ。

この日は、諦めていたのにありつけた、ランチと呼ぶには遅すぎる時間にプレートを頂いた。十分すぎるボリュームとディティール。何処かで出会った「日本の定食」を思い起こさせる。

セイタンのベシャメルソース、野菜と豆のトマト煮込み、カリフラワーグリル、ピラフ、サラダ（このサラダとドレッシングの感じが、それのアーキタイプっぽい）。

本当のところは、スープを頂きたい腹具合＆モードだったけど、生憎それは終了していたので、観念して、有難くがっついた。傍目に見えるショーケースには、背徳感のあるルックスの、デビルズなんとか、みたいな黒いケーキやマフィンが私を誘惑し続けていた。

What a color! 

Fried black wild rice noodle with red cabbage, ginger, sesame and sunflower seed. Adding ‘Mirin’ a bit makes its spicy flavour moderate, and of course it adds Japanese full-bodied taste definitely!

Vegan chili con carne @Veganz

When I participated in the workshop at Kushi institute of Europe, Amsterdam, for the first time. The thema was ‘Quick Brunch for Sunday’. It was interesting how european represented Japanese macro meal in Bruch way. Basically Japanese loves eating three times in a day as my comprehension... Well, let’s see.

I got to know the excellent arrange which I’ve never thought of it by Valentina who became my boss at the kitchen afterwards. She offered;

・Baked rice ball ~ teriyaki （照り）焼きおにぎり　

・Pickles ~ Cauliflower　カリフラワーのピクルス

・Miso soup with Fu & Yuzu　麩とゆずの味噌汁

・Leak with ume dressing　　茹で長ネギ　梅ドレッシングとゴマ

・American pancake　パンケーキ、メープルシロップとブルーベリー

・Porridge buckwheat  蕎麦のポリッジ（甘！） After first visit, I’ve dreamed to work at the kitchen of DESHIMA as Japanese Macrobiotic practitioner that would have been able to contribute anything. I tried to email for inquiry of job offer. Then I got a response that was ‘no position so far’ but invitation for their workshop. No sooner had I received the email, then I started to schedule for it.  This was the opportunity towards later. 2017年4月。初めクシインスティチュートオブヨーロッパ@アムステルダムでワークショップを受けた時のこと。テーマは「日曜のクイックブランチ」。

その前年末、初めてデシマランチルームと併設食材店を訪れ、いたく感動した。長年マクロビ実践してて、海外でのマクロビに直に触れて、日本人として。同志はきっとわかってくれると思う。逆に、この土地では、ベジ・ビーガン・オーガニック文化はあっても、マクロビオティックは、まだまだそこまで普及していない。

「ここで働けたらなぁ」。食事を終えて、いつものように、キッチンのスタッフに「仕事のポジションありますか？」って聞いてみた。私は、どこでも聞くことにしている。オフィスに確認を、と言われたので、ホームページからemailした。残念ながら、「今は募集してない」とレスがあった。だけど、「よかったらワークショップにいらしてください」と一文あったので、早速直近のスケジュールを調べて、向かうことにした。 英語での講義も多くスケジュールされており、この日も安心していたが、全くのオランダ語だったのは痛恨のミスだった。

日本人だから料理の基礎がある。出汁の取り方、麩の扱い方、ゆずとは何か等を質疑応答しているのは理解できた。しかし、オランダ語は全く歯が立たず。ドイツ語のようで、違う。車麩をヨーロッパで見たのは初めてだった。 講義後、フォローも兼ねて、私はライターもしていて、今日のことをレポートしたい、と彼女に話しかけた。

その後、ボスとなるバレンティナ（クシインスティチュートオブヨーロッパの創設者夫妻の娘）と初めて対面する日となる。

この日のおかげで、後日、「キッチンのスタッフが一人辞めるんだけど、興味ない？トライアルにこない？」と連絡が来た。夢って叶うんだね。

ーこの日の料理総括ー

春とはいえ、まだまだ気温の低いヨーロッパ。炊いたお米も、ゴマ油でフライして「陽」にする。油を多用するのはクロケット（コロッケ）文化のオランダだからか、西欧だからか。そこは日本ではあまりない発想かも。焼きおにぎりといえば醤油なんだけど、プラス味醂がっつりの味付けも！

蕎麦の実は、意外に日本では手に入らない。ドイツ、オランダでは結構簡単に見つかる。そこまでアロマは強くない。少し苦味のある、雑穀という感じ。挽いた粉も、日本蕎麦ほど風味はない。お米の代わりに炊くことはあるけれども、デザートの様に甘くして頂くのは目から鱗。和菓子的発想。やっぱりこっちの人、甘いの好きなんだよね。でも、白砂糖は使わず賢くがマクロビ流儀。

Give me the name of this herb. I thought it was likely bohnenkraut. But taste is more sweet and mellow.

デシマ地下のグロッサリーでは、オーガニック野菜から納豆菌まで取り扱う。ここまで日本料理必須の調味料や食材（もちろんオーガニックメイドで！）をカバーしてる店舗は海外で中々ない。日本の冷麦乾麺とか福神漬けもある。本や圧力釜包丁などのキッチンツールも網羅。

この菌で作られたデシマ製納豆も販売。他にも各種味噌、醤油もグルテンフリー事情に適うタマリもアリ。同様に甘酒も、玄米だけじゃなくてヒエ(独Hirse,蘭gierst英millet)のものもある。 マクロビ基本の玄米も数種。ヨーロッパではイタリアが米どころ。でんぷんの質が少し違うと聞いたことがある。総じて日本のお米ほど小粒ではない。ドイツ語だとBasmati、Longkornっていう所謂タイ米的なサイズが半分を占めてる。日本式白米は、Milch rice、Susi rice、 Mochi riceって銘柄で売られてる。

いつものように、休憩時間に掻き込んでのだろう。新聞記者時代からの悪癖、早食い。一分一秒を争い、次いつ休めるかわからないという肉体労働だったから、生存本能が疼くというか。無理せず、よく噛んで味わおう。

Fruits kanten. at Deshima, Amsterdam. I never dreamed to eat this classical Japanese healthy refreshment in Summer of Europe! Kanten is kind of seaweed offering strong solid texture that is highly recommended!
