Short instructions for 2 servings:
🍄🟫 Reconstitute shiitake: Place 3 large dried shiitake in a heatproof bowl. Bring some water to a boil, pour into the bowl and cover with a lid or plate. Let it sit for 20 minutes.
🔪 Prep ingredients: Chop 100g garlic chives into 5 cm long strips and separate the lighter stems from the darker leaves. Once the shiitake are ready, squish them lightly to get the water out, then cut into thin strips.
🍲 Prepare sauce & noodles: Heat up water (no salt!) in a large pot. Once it boils, cook the noodles according to package instructions, or ideally a little shorter. Drain and set aside. Mix in a bowl: 1/8 tsp sugar, 1 tsp light soy sauce, 0.5 tsp dark soy sauce, 1 tbsp oyster sauce, 0.25 tsp sesame oil, 1/8 tsp ground white pepper, 0.5 tbsp water. Heat up the mixture in a small pan and stir until well-integrated. Take off the heat.
🍳 Stir-fry: Spread oil around a large wok over high heat. When hot, add the sliced shiitake and the lighter parts of the garlic chives. After 30 seconds, add the noodles and stir-fry for another minute. Spread the pre-mixed sauce around the wok evenly. Once everything is well-coated, add remaining parts of the garlic chives and stir-fry for another 2-3 minutes.
