I like to head cannon that the sea monsters are a lot more different than humans than they are portrayed in the movie. For example: since they live underwater and sound passes differently under there they either have to communicate like whales and dolphins do (with high pitched whistles and clicks) or they have a form of sign language or both! I also think it's interesting to think that since Alberto has been living partially on land for so long he has picked up bits and pieces of human language and he had to teach what little he knew to Luca. I also like to think that their mannerisms are very bizarre to the humans on land.
