The Canadian Birch Company showed us just how versatile their birch syrup is, by whipping up a birch flavour infused cheesecake, and then a birch, whisky toffee sauce to drizzle over top in order to serve the most decadent dessert ever! John Boy Farms - Sampling
Thereâs another new label on the shelves at Generation Green, John Boy Farms/Apple Junction.
These 5th generation farmers south of St. Agathe, Manitoba are bringing us delicious Apple Syrup & Apple Jelly! Using a unique apple press, and several different types of apples from Manitoba, some of which come from utilizing the Fruit Share program in Manitoba (fruit that would otherwise go to waste), they create a cider that they then use to produce their products.
The apple syrup is made in small batches and is excellent on pancakes, french toast and waffles. But it can also be used as a glaze on ham/meats or added to your favourite meat sauce, salad dressings, oatmeal or coffee and tea.
Their traditional apple jelly is also made using their Manitoba sweet apple cider, and is excellent on toast, bagels, croissants, etc and makes a great jelly sandwich. It can also be used to glaze meats or as a side jelly with turkey/chicken.
Stop by Generation Green at The Forks on Friday, December 13th from Noon-3PM to sample for yourself! Miniature bottles are also available & make great stocking stuffers!
Thereâs a New Shyrup in Town!
Birch Syrup is quickly making a name for itself and when you try it, youâll know why. This syrup is warm, rich and full of flavour, but let us get one thing out of the way⌠This is NOT like Maple Syrup. Much like the younger sibling following in the footsteps of an older, no one and nothing likes to be compared. So, for the purpose of this article, and while youâre savouring your first spoonful of syrup, pretend youâve never had maple syrup. Trust me; your life will be enriched by this experiment.
Like most great âCanadianâ things, Birch syrup was first used by aboriginals.  From what I have read, the process of collecting birch syrup is still relatively the same, modern tools aside. This is such a beautiful aspect of any syrup collecting. The technique really canât differ from the original method.  It also has a few âhealing propertiesâ from what Iâve read.  Birch syrup can be beneficial for your skin, as well as aiding in treating arthritis, rheumatism, and gout, cramps, inflammation and muscle pain.
Birch syrup, however, is a finicky syrup to collect. Because Birch trees thrive in a Northern Climate, the âtappingâ season is shorter and there is a required tree size for tapping. It also takes 100-120 liters of sap to produce one liter of Birch Syrup (more than double the amount for Maple Syrup)! This is what makes Birch Syrup worth so much more!
We have tried a couple of different Birch Syrups at the store, and to be honest, we werenât crazy about them. And then we tried the Canadian Birch Companyâs Birch Syrup. It doesnât even taste like the same product! Other syrups were almost burnt tasting and heavy, but this syrup is light and rich and an explosion of taste all at once.
The methods that The Canadian Birch Company uses are different than most other Birch Syrup companies and itâs their methods that make them stand out. Without getting too technical, they cook their syrup for less time, which means the integrity and flavour is retained.
There are 3 different types of Syrup, each collected at different times of the season.
The Amber Gold is collected right at the start of the season and it is the sweetest. This goes beautifully on Ice Cream, Cheesecake or any other desert. You could also use this one on Pancakes, Waffles or French Toast if you so wished. Keep in mind though that a little goes a long way. The flavour of Birch Syrup is much richer than Maple Syrup!
The Amber Birch Syrup is collected in the middle of the season. It is not as sweet as the Amber Gold, and is great to mix with the Amber Gold if you wanted to cut the sweetness and stretch your syrup.
Finally, the Dark Birch Syrup is collected at the end of the season and it is much less sweet. This is great syrup for meats, savoury dishes and even Toffee Sauce. Iâve been told that making pulled pork with this syrup is out of this world.

In, On & Around!
Today I had the amazing opportunity to attend the 22nd annual, Guardian Angel Benefit for Womenâs Cancer.  The theme this year was Manitobaâs largest Tea Party! Such a lovely, classy setting was created for a crowd of 1400, that were mostly women. We sipped our tea, from authentic tea cups (that were donated with stories attached of their history) and in true high tea fashion, nibbled on tiny sandwiches and scones with jams.  To have this time with some of my closest friends, was really special, especially when you hear the statistics that 1 in 9 women will be diagnosed with breast cancer, which is the most common amongst women.  I unfortunately already have known friends to have had this diagnosis, but thankfully they are survivors. The guest speaker this year was Fran Drescher, who created and starred in âThe Nannyâ.  Fran was so inspiring with her personal story of  diagnosis and survival.  She spoke so honestly and openly, and I seriously could have listened to her all day. Fran has created a movement called "Cancer Schmancer" and wrote a best-selling book likewise titled. Franâs focus is not on a cure but rather on prevention, as prevention starts the cure! Early detection is what is needed, and in order to do that we need to start by questioning what is going in, on, and around our bodies!  Just start with one area, and it will create a domino affect in your life. Becoming aware of what exactly I was putting on & in my body, as well as using to clean my home, was exactly where I started almost 6 years ago.  I didnât have Franâs thinking of cancer prevention, but more out of fear and grasping for some control. Due to my own health scare with first being diagnosed with a rare type of uterine cancer, having to have a complete hysterectomy, then finding out what presented as cancer initially, was rare type of tumour, but thankfully not cancer. It is though what got my ball rolling, I didnât know what was the cause, so I wanted to make sure I was doing all I could to protect myself, and my family. Cancer Survivors were the models in the fashion show. They all looked amazing! Fast forward to a year ago when I decided to open Generation Green.  My intention was to try to let others know there were safer alternatives to some conventional products.  Creating awareness though is the first step. I personally believed for the longest of time, that someone had to have my best interest at heart, and there is no way that a potential carcinogen could be in my shampoo! We should not have to live fearfully, we should demand products that are safe, and we can only do this by the choices we make.  Every purchase is a vote basically for what will stay on the shelf, so think about it and read the ingredients before you purchase. My health is nothing I take for granted, and neither should you.  Take control, and become aware of the âIn/On & Aroundâ.  âFrom the bitterness of disease man learns the sweetness of health.â  ~Catalan Proverb Silent Auction donations were over the top! Did you knowâŚAccording to the U.S. Environmental Protection Agency, the highest levels of airborne Formaldehyde have been detected in indoor air where it is released from various consumer products. Formaldehyde is a known human carcinogen, causing various types of cancer.
