Chorizo and potato roti, with broad beans, pea shoots and pickled cucumber. Or, as the french say ‘concombre’.

Really very simple. Gently sweat the chorizo on a low heat to extract the spiced oil, then turn the heat to high and toss in some blanched potatoes (let them steam dry for a while so there is little moisture left).

Once the potatos have become narly and crispy, add some sliced garlic, seasoning and thyme flowers.

Shell the broad beans and simply warm through in a water and butter emulsion. They should still be al denté.

*for the pickled cucumber - mix mirin, rice vinegar, red wine vinegar, salt together. Add the fine sheets of cucumber (use a peeler to get them translucent-thin), and leave to pickle for 10 mins.

Finally add together the potato chorizo has, the broad beans, pea shoots and sour cream on top of the toasted roti. Drain the cucumbers from the pickling liquor and place on top.
