Re: Post-Rainout. I do have some thoughts, they're not super cohesive though. The main story really is just the weekend they spend together, and I'm kind of reluctant to go into the after details because we know some of the stuff that happened at TwitchCon, behind the scenes, and I don't particularly wanna write around that. THAT BEING SAID...
They probably had a really great week staying with Oli, but his house is pretty small I think? So I imagine both Grian and Gem sharing a pullout sofa together. And after a weekend of just being able to give in to urges and fuck whenever they want, it's difficult. Especially after both of them had been secretly pining for so long. They probably try to be quiet while fooling around but feel super guilty about it because they're in Oli and El's living room or office or wherever, so it never goes all the way. Maybe they get desperate & frustrated enough to sneak out to Grian's car in the night for some privacy. They're not as subtle as they think, the car is Not soundproof, and Oli definitely sees them and teases them about it for the foreseeable future. Hey guys, remember the time you banged in our driveway?
Other than that, it's just really nice to spend some time on double and triple dates with Joel and Lizzie, Oli and El. They get to feel like a real couple even though they haven't officially talked about it. Also, maybe Gem gets to see Grian with LDShadowBaby and it gives her Feelings™. And vice versa. I think seeing Gem hold a baby would make Grian slightly insane (me too buddy).
The night before they head off to Rotterdam, they drive back to Grian's house so he can grab fresh stuff for the trip. Maybe they have a nice little domestic night. Gem can do some laundry so she's also got fresh clothes for TwitchCon, Grian cooks or orders dinner, and they're both excited to spend the night alone together again, and looking forward to sharing a hotel room in Rotterdam. At that point, they finally have a serious talk about what kind of relationship they can have, long distance, what they want, what issues might come up, if it's worth the effort etc. But they already loved each other so much as friends that they decide it's worth the long distance. They do decide to play it cool in Rotterdam though, they'll be hanging with a lot of people who don't know about them yet.
Re: TwitchCon. In this timeline Grian probably doesn't go through his kidney stones issue, doesn't wear his wedding ring (he's divorced in this fic lol). It's just a sweet fun trip for them except for the Avid drama going on in the background, which they avoid getting involved in. There's a small gang of them that go to Amsterdam for a night together and I low-key imagine Jim, Kirsty, Gem, and Grian going splitsies on a space cake just to try it, and having a very stoned evening in Grian's hotel room. All of them cuddled up in bed watching TV and snacking. This is my AU and I can do what I want and I want them high af. I have more explicit thoughts about this situation but I won't get into it rn.
At this point in the trip, Gem knows she only has a couple of days left with Grian (and the rest of her friends I guess) before she has to go home. She spends as much time as possible with them, and then travels back to the UK. She's flying home out of London so she and Grian would probably stay in a hotel near the airport to maximize their time together rather than driving all the way to Grian's house and back. They're both sad that it's their last night together for real, at least for a few months. Gem talks about visiting for Grian's birthday in August, he laments that he can't wait that long. And it's his turn to visit her, anyway. Summer in Newfoundland, maybe they can finally do that fishing trip together? They start making real, concrete plans to be together.
They won't be able to kiss goodbye at the airport so they spend the night making up for it. Spoiler alert, they decide to risk it and kiss goodbye at Gem's check-in anyway. It's fine, nobody sees. But at that point they both start to realise that their relationship isn't something they want to hide for longterm. Grian had spent most of his marriage trying to keep his ex-wife out of the spotlight, and over time it had taken its toll, led to bitterness and resentment. He doesn't want to do that again. They'll keep it to themselves for a little while longer, but not forever.
At some point far in the future, Gem moves to the UK, and Grian buys some properties in NL for both business and personal reasons, and they travel back and forth fairly often (though, definitely more based in UK). They're pretty open about their relationship online, always streaming together and posting photos from their trips and vacations. I think, after his divorce, Grian thought he'd probably never want to get married again, but the longer he spends with Gem, the more he thinks about how much he actually wants to marry her. Have a family with her. And hell, she's already uprooted her whole life in Canada to come live with him. That alone is a huge commitment.
And so, one day, he proposes. And she says yes.
And they live happily ever after, because I said so. I'm gonna shut u here though. I could think about this AU forever and ever tbh, it's so cozy and domestic to me, and that's one of my favourite things in fic. Softness. I just want them to have a happy ending.

Thinking about a world where Mumbo breaks up with Grian (for being obsessive/possessive, perhaps) and then gets with Scar a little while later. Which makes Grian mad.
