Scotch Eggs
Scotch Eggs
1 dozen eggs
2 large eggs
2 cups bread crumbs
vegetable/canola oil
2-2.5 lbs of sausage meat (I like sweet Italian other prefer Jimmy Dean)
Hard boil 1 dozen eggs (Tip: If they are a week old, they will be easier to peel), chill and peel.
Separate sausage into 12 equal sized meatballs. Using your thumb, create a hole about an inch deep and start to shape the meat into a small cup shape. Place an egg into the sausage and using your hands, cup the sausage around the egg until it is wrapped around the egg. (Tip: Keeping your your hands wet with a little water will allow the sausage not to stick to your hands.) Continue until all eggs are wrapped in sausage.
Whisk 2 large eggs in a small bowl to make and egg wash and place 1-2 cups of bread crumbs on a shallow plate.
Dip wrapped sausage eggs into the egg wash and then roll the eggs in bread crumbs to coat. Let dry a minute and dip in egg wash again and coat with a second layer of bread crumbs.
Preheat oven to 350 degrees and heat 1/2 inches of oil in a pan.
Pan fry the coated eggs for a minute or two on each side until completely browned. (You can fry 4 eggs at a time depending on the size of the pan you are using.) Place the eggs on a paper towel to cool.
Place the eggs in a pie plate or pan and bake at 350 degrees for 30 minutes to cook sausage completely. (Tip: I like to use a muffin pan, so the the Scotch eggs don;t get soggy from sitting in their own oil.)
Cut into quarters and enjoy with a little spicy mustard!
