1 Large sweet potato, peeled

4-6 slices sugar-free bacon

Ham, Cheese and Pea Frittata

1 cup (120g) frozen baby peas (not thawed)

2 small Desiree potatoes, quartered

3 teaspoons olive oil

1 single chicken breast fillet, trimmed

1 slice Swiss cheese, quartered

2 bacon rashers, rind removed, halved lengthways

1 carrot, peeled, sliced, steamed

2 baby squash, quartered, steamed

FOR THE SALAD:

4 cups Mixed Salad Greens (or As Much As Desired For 2 Servings)

½ cups Sliced Carrots (Sliced Widthwise)

¼ cups Shelled Edamame

½ cups Sliced And Quartered Hothouse Cucumbers (Or A Regular Cucumber)

¼ pounds Thinly Sliced Black Forest Ham

¼ cups Dried Cranberries

½ cups Crumbled Blue Cheese

1 cup Fresh Whole Blackberries

FOR THE BLUE CHEESE DRESSING:

½ cups Mayonnaise

¼ cups Milk

½ teaspoons Lemon Juice

4 dashes Salt

5 dashes Ground Black Pepper

4 dashes Onion Powder

3 Tablespoons Crumbled Blue Cheese

Ingredients

450 grams of frozen spinach

1 large chopped onion

2 cans of crushed tomatoes

2 cubes of vegetable stock

15-18 lasagna sheets (I use whole wheat)

1 package (4 deciliters) of pre-made cheese sauce (of course you can also make your own)
