Ingredients: 4 chicken cutlets. 1/2 cup cornmeal. Salt and pepper to taste. 2 medium zucchinis, thinly sliced into ribbons. 1 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 1/4 cup fresh basil leaves, chopped. 2 tablespoons olive oil. 2 tablespoons lemon juice. 1 tablespoon honey. 1 clove garlic, minced. 1 teaspoon Dijon mustard.
Instructions: Preheat oven to 400F 200C. Season chicken cutlets with salt and pepper, then coat them evenly with cornmeal. Place the coated cutlets on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until cooked through and golden brown. In a large bowl, combine zucchini ribbons, cherry tomatoes, red onion, and basil leaves. In a small bowl, whisk together olive oil, lemon juice, honey, garlic, and Dijon mustard to make the dressing. Pour the dressing over the salad ingredients and toss to coat evenly. Serve the cornmeal-crusted chicken cutlets alongside the zucchini ribbon salad. Enjoy!
