This simple and flavorful dish combines the earthy taste of mushrooms with crispy oven-roasted potatoes, seasoned with garlic and thyme.
Ingredients: 1 lb potatoes, cubed. 8 oz mushrooms, quartered. 2 tablespoons olive oil. 1 teaspoon garlic powder. 1 teaspoon dried thyme. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Get the oven ready by heating it up to 400F 200C. Add olive oil, garlic powder, thyme, salt, and pepper to a large bowl. Add the potatoes and mushrooms and toss them around until they are well covered. Place the mushrooms and potatoes that have been coated in oil in a single layer on a baking sheet. Put the potatoes in an oven that has already been heated and roast them for 25 to 30 minutes, stirring them once or twice during that time. Before serving, sprinkle with fresh parsley.
