Fans who say that being "relatable" makes a character deep are confusing emotional manipulation with depth. They think it's deep because it makes them feel deeply but if you actually think about it for more than 5 seconds then it isn't deep at all. It is narcissism, not depth.
People who handwave away OOC characterizations with "character development" or "it's a different side to them" are really saying the OOC version is who the characters really are. They don't actually believe in character development because they are fine with the characters being rewritten to always be that way. They don't actually care about the original characterization and just want their OOC wear the original as a skinsuit.
Don't give these people an inch.
