This is the last wedding cake I will be making for my business (I’ve moved on to exclusively working on cookies). I’m really proud of this final bake and enjoyed the process of piping all the details. I’ll never be a proficient cake decorator imo, but I grew a fondness for vintage cakes over the years. 🤍

Chocolate Strawberry Mousse Cake
Ingredients
Chocolate Cake Layers
• 2 cups all-purpose flour (250g)
• ¾ cup cocoa powder (75g)
• 1½ cups granulated sugar (300g)
• 1 tsp baking powder (5g)
• 1½ tsp baking soda (7g)
• ½ tsp salt (3g)
• 2 large eggs (100g)
• 1 cup milk (240ml)
• ½ cup vegetable oil (120ml)
• 1 tsp vanilla extract (5ml)
• 1 cup hot coffee or hot water (240ml)
Strawberry Mousse Filling
• 2 cups fresh strawberries, pureed (300g)
• 2 tbsp lemon juice (30ml)
• ½ cup sugar (100g)
• 2 tsp gelatin powder (6g)
• 3 tbsp cold water (45ml)
• 1½ cups whipping cream (360ml)
Strawberry Syrup (Optional)
• ½ cup strawberry puree (75g)
• 2 tbsp sugar (25g)
Chocolate Ganache
• 1 cup dark chocolate, chopped (170g)
• ¾ cup heavy cream (180ml)
Decoration
• Fresh strawberries
• Whipped cream
Instructions
Preheat the oven to 175°C (350°F). Grease and line two 8-inch cake pans.
In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla. Mix until smooth. Gradually stir in the hot coffee or water.
Divide the batter evenly between the pans and bake for 30–35 minutes or until a skewer inserted in the center comes out clean.
Allow the cakes to cool completely before slicing each cake horizontally to create four thin layers.
For the mousse, bloom the gelatin in cold water for 5 minutes. Heat the strawberry puree, lemon juice, and sugar until warm. Stir in the gelatin until dissolved. Let cool to room temperature.
Whip the cream to soft peaks and gently fold it into the cooled strawberry mixture.
For the syrup, simmer the strawberry puree and sugar for 2–3 minutes and allow to cool.
Place the first cake layer on a serving board. Brush lightly with syrup and spread a layer of strawberry mousse. Repeat with the remaining layers.
Chill the assembled cake for at least 2 hours until firm.
For the ganache, heat the cream until just steaming and pour over the chopped chocolate. Let sit for 2 minutes, then stir until smooth and glossy.
Pour the ganache over the chilled cake, allowing it to drip naturally down the sides.
Pipe whipped cream on top and garnish with fresh strawberries.
Chill for 30 minutes before slicing and serving.
Yield: 12–14 servings.
